Penne Pasta, buy some fresh pesto sauce (usually near the fresh/refrigerated pasta), then add whatever you like. I like to add chunks of chicken & red peppers. When the pasta is done mix all ingredients together in the pot & the heat from the pasta heats the sauce, etc. Serve immediately. I'm making that tonight. I am not a very good cook & this impresses my boyfriend. lol.

This recipe my family loves--- Butter the bottom of a large pan. Place boneless chix on,Then cheese(any kind),then stove top chix stuffing(premade) on top. Cook at 350-- Till chix is done. For 6-8 pieces of chix-Will take about 25-30 min. Serve with Rice a Roni and fresh baby carrots (boiled till almost soft) with butter and sweet and sour sauce (duck sauce) mixed in. Yum!! And quick and easy!

SPICY SHRIMP COCKTAIL
2 lb shrimp, cooked, peeled and deveined. Chilled.
4 med tomatoes, diced
1 bu cilantro, finely chopped
1 fresh jalapeno, diced
2 cloves garlic, crushed
1 onion, diced
1 large avocado, diced.
1 large bottle ketchup
1 jar cocktail sauce, hot or mild
hotsauce, like tabasco or tapatio
6-8 lemons
saltine crackers
In a bowl, add shrimp and squeeze lemon juice from 1 or 2 lemons on it. Put back in fridge.
In a large stock pot, add 4 cups cold water.
Add the entire bottle of ketchup, cocktail sauce, cilantro, jalapeno, garlic, onion, tomatoes. Stir content until completely mixed.
Squeeze 4 lemons into the mix. Add hot sauce to the mix according to taste. If you like it hot, add 6-10 tsp. If you want it mild, add a 3-4 shakes (approx 2 tsp).
In a bowl, Add the tomato mixture into the mug then add a serving of the chilled shrimp and serving of avocado. Serve chilled and with crackers.
To make the cocktail hotter, add more hot sauce.
To make tangier, add more lemon juice and ketchup.
Serves 4-6

Boneless, Skinless Chicken Breast,
cook in frying pan with Pam cooking spray until almost done
Add 2 Tbsp of orange juice and simmer, the juice will make a glaze on the chicken.
It's SO good, quick and easy!

Orange Juice Chicken w/ White Rice
4-6 chicken tenders
1/2 cup of flour
4 TBSP of butter
1/2 tsp of garlic powder
salt and pepper to taste
1-2 cups of Orange Juice *
White Rice-Cook as directed on Box
1. Start cooking rice
2. mix flour with a dash of salt and pepper in bowl
3. Dridge chicken thru flour mixture
4. Heat butter in pan with garlic and dash of salt and pepper
5 Brown chicken for 1 minute on each side or until chicken is partial cooked.
Pour Orange Juice over the top of Chicken until covered. (Amount of OJ may vary depending on how many pcs of chicken) Cook another 3 minutes or until fully cooked
Your will have nice orange sauce to pour over chicken and rice

Suddenly Salad is quick easy and would be very homemade tasty with a couple of your own extra ingredients added, like cubed fresh tomatoes, small cubes of cheese, whatever extras you like. Black olives are good too and green peas. I love it. Prep time 15 minutes.

Chicken glazed with orange marmalade and white wine!
Coat chicken breasts with a mix of flour, salt and black pepper then sautee with a little butter/margarine in a large pan until browned. Deglaze with dry white wine, add chopped parsley and your favorite orange marmalde. Add OJ if you want more sauce. Simmer until thickened. serve over rice, noodles whatever... I also will add sliced of fresh orange it fancy it up...
Super yummy and so simple.

Chicken Salsa Soup
Boil 1lb boneless/skinless chicken breasts until cooked
(this doesn't take long maybe 10 minutes) After that let them cool and chop them into chunks.
Then get a jar of salsa (I like pace chunky salsa)
and 1 can of corn and dump it all into a pot with your chunky chicken and simmer until you like it. I usually put one cans worth of water in also. It just depends how soupy you like it.

stir-fry.
chop your vegetables, add a bit of oil to your pan, put the veggies in, add some soy sauce.
also add chicken cooked in the same way if you want.
and presto! you don't even need to serve it over rice, but you could if you have time.
