PINEAPPLE LADY FINGERS DESSERT
3 packages lady fingers
1 package (8 ounces) cream cheese
3/4 cup sugar
1 teaspoon vanilla extract
2 cups crushed pineapple
1 can pineapple pie filling
1 pint whipping cream
1/2 cup walnuts (chopped - optional)
Drain crushed pineapple; and combine with pie filling in large bowl. In medium bowl, beat cream cheese, sugar and vanilla extract until smooth. Fold this mixture into the pineapple mixture. Whip cream in another medium bowl until almost stiff and holds peaks. Fold the whipped cream into the pineapple-cheese mixture. Line lady fingers around the sides and bottom of a 9-inch spring form pan. Pour 1/2 of cream mixture into the springform pan and then top with more lady fingers and the rest of the cream mixture. Top with chopped nuts. Refrigerate overnight.

hawaiian cole slaw
INGREDIENTS:
4 cups shredded cabbage
1 (11 ounce) can mandarin oranges, drained and liquid reserved
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon white pepper
1 cup crushed pineapple, drained
1/3 cup mayonnaise

DIRECTIONS:
In a large bowl, toss together the cabbage, 1 tablespoon of reserved orange juice, salt, ginger, nutmeg, and pepper.
Toss the oranges and pineapple into the mixture. Stir in mayonnaise until evenly coated. Chill well before serving.

Chicken Luau
2 lbs Chicken thighs
2 packages thawed chopped spinach
1 can coconut milk
1 teaspoon sugar
Onion chips
Preheat oven to 375°F. Combine the ingredients in a baking dish, pouring the coconut milk over the top. Bake about 1 hour till the chicken is done. Thicken with a paste of cornstarch and water. Season with salt as needed.

10 ounces breaded chicken tenders
1 (10 ounce) jar sweet and sour sauce
1 (8 3/4 ounce) can pineapple tidbits
1 (16 ounce) package frozen oriental-style vegetables
Prepare chicken according to package directions.
Place cooked chicken in a large skillet.
Add sweet and sour sauce, pineapple and frozen vegetables.
Cover and simmer 25 minutes or until vegetables are tender.
Serve over rice.

Aloha Chicken Wings
Baked chicken wing appetizers with a fruity pineapple-orange based sauce. Very good! Great for parties and sports get-togethers.
3 lbs chicken wings
1 cup pineapple preserves
1/2 cup dry sherry
1/2 cup frozen orange juice concentrate
1/2 cup soy sauce
1/2 cup brown sugar, packed
1/4 cup vegetable oil
1 teaspoon garlic powder
1 teaspoon ground ginger
12-15 appetizers
1. Cut wings into sections and discard tips or save for another use.
2. Place wings in a large resealable plastic ziplock bag.
3. Stir together preserves, sherry, orange juice concentrate, soy sauce, brown sugar, oil, garlic, and ginger, until thoroughly combined.
4. Pour mixture over wings in bag and seal.
5. Work marinade over all parts of chicken wings and allow wings to marinate, refrigerated, for 6 hours or overnight.
6. Place wings on a foil-covered baking pan and pour 1 cup of the marinade over the wings; discard the rest of the marinade.
7. Bake wings at 350F for 1 hour

Tropical Salad with Pineapple Vinaigrette:
INGREDIENTS:
6 slices bacon
1/4 cup pineapple juice
3 tablespoons red wine vinegar
1/4 cup olive oil
freshly ground black pepper to taste
salt to taste
1 (10 ounce) package chopped romaine lettuce
1 cup diced fresh pineapple
1/2 cup chopped and toasted macadamia nuts
3 green onions, chopped
1/4 cup flaked coconut, toasted

DIRECTIONS:
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
In a cruet or jar with a lid, combine pineapple juice, red wine vinegar, oil, pepper and salt. Cover and shake well.
In a large bowl, toss together the lettuce, pineapple, macadamia nuts, green onions and bacon. Pour dressing over salad and toss to coat. Garnish with toasted coconut.
