I use alot of recipes that call for egg whites, but not the yolk, but I do use the yolks for when I make fresh ice cream.... is it possible to freeze the egg yolks without disturbing the protein balance in the yolk itself? If I freeze them in the quantity I'll need for the ice cream, I could just defrost them when I decide to make it... but I just don't know if I can actually freeze the egg yolks without ruining them. Any help you have on this subject is much appreciated. Please don't answer with an "I don't know", just to answer. Thanks in advance for your help!

Egg yolks can be frozen. Mix them with sugar and freeze them in Small batches as needed in your recipes. I worked in a bakery for many years and we bought frozen eggs yolks. The difference was these yolk were frozen for resale under ideal conditions. Don't let them sit for more than 4 months in the freezer and mix them with some sugar, mark the container and pull out he day before you will make your ice cream.

Egg yolks choose a pinch of salt or sugar overwhelmed in (reckoning on no matter if or not they're going to be used for sweet or savoury dishes later). this can stop them from thickening too a lot upon freezing. Defrost frozen eggs contained in the refrigerator in one day and use them straightaway. Use interior of one month.

sure you probably could...but remember salmonellae!
ice cream itself is very susceptible anyway concerning these cute little bacterias and if you freeze the egg yolks you want to make the ice cream with, it might be even more dangerous, especially regarding freezing the yolks TWICE (once by themselves and once within the ice cream).
i mean, you don't cook the yolks when you make the ice cream, do you?
i wouldn't dare to freeze them and use the egg yolks to make myself a tasty little egg nogg instead...

Try freezing them in an ice cube tray. That way you know how many you have for a certain recipe

Yes you can, but you need to scramble them first. Sounds strange, I know.

I don't see why you couldn't , but I would get a heavy duty freezer container,instead of the usual freezer bag. I make icecream too and it works out ok for me.
