Philly Guacamole Dip
2 medium avacados, peeled
1 Tablespoon lemon juice
1- 8 oz. package cream cheese, softened
1/4 cup finely chopped onion
1/2 teaspoon salt
1/4 teaspoon garlic salt
1/4 teaspoon hot pepper sauce
1 cup chopped tomatoes ( I don't put this in mine but I am funky about tomatoes) Mash avacados with lemon juice. Combine onions and seasonings mixing well until blended. Stir in tomatoes, if desired. Serve with tortilla chips.

Guacamole
2 large avacados
3 tablespoons large grated onion
3 large garlic cloves squeezed thru press
2 tablespoons chopped chiles, or to taste
2 tablespoons chopped red pepper or pimento
Juice of 1 small lime
1 tablespoon lemon juice
2 tablespoons sour cream
Salt and pepper to taste
1/2 teaspoon ground cumin
1 tablespoon chopped fresh cilantro (can use dried, but the flavor is not the same)
Dash of hot sauce, or to taste
Cut the avacados in half around the pit; discard pit. Squeeze each half over processor bowl; the meat will easily slide out of the skin. Add all other ingredients, reserving a little of the citrus juices until you are certan the mixture will not get too thin. Process until desired texture, but not too smooth. Taste for seasonings and add what is needed. Refrigerate until use.
Personally I like mine on the chunky side so I skip the processor and go with just a dinner fork to mash and mix the ingredients.

I make tons of different types of guacamole, it's crazy how just a little of one ingredient can totally change the taste! Here's a couple different ones I've tried:
Smoky Guacamole:
2 ripe Haas avocados
1 lime, juiced
A couple pinches salt
1/4 cup sour cream, 3 rounded tablespoonfuls
2 chipotle peppers in adobo, available in cans on specialty food aisle in Mexican section
Cut avocados all the way around with a sharp knife. Scoop out the pit, then spoon avocado flesh away from skin into a food processor. Add the juice of 1 lime, a couple of pinches salt, sour cream and chipotles in adobo. Pulse guacamole until smooth. Transfer to a serving bowl.
Guacamole Salsa
1 cup frozen corn kernels, defrosted
1 chipotle chile in adobo sauce
1 small red onion, chopped
2 cloves garlic, peeled and finely chopped to a paste
1 lime, juiced
Salt and pepper
2 large vine-ripe tomatoes, cored and chopped into large chunks
1 avocado, peeled, pitted, and diced
1/4 cup chopped fresh cilantro leaves
In a mixing bowl, combine the corn kernels, chipotle pepper, onion, garlic, lime juice, salt, and pepper. Stir until combined and then fold in the chopped tomatoes, avocado, and cilantro. Serve immediately.
Guacamole
15 medium avocados
24 ounces hot picante salsa (recommended: Pace brand)
6 serrano peppers, finely diced
1 small white onion, finely diced
1 lime, juiced
1 teaspoon salt
2 bunches cilantro leaves, finely chopped
6 Roma tomatoes, diced
Black pepper
Combine avocados, salsa, serranos, onion, lime juice, and salt. Combine ingredients together. Add cilantro, tomatoes, and black pepper. Stir gently.

Garnish as desired and serve with tortilla chips.

I like change my recipe and mix it up but I always put a little lime or lemon juice to help it retain the green color. Sometimes I use different hot sauces, wasabi, horseradish, salsa --I'll use different hot spices as well. A little cayenne pepper is always good too

Avocados, cilantro, jalapenos peppers, onion, tomatos, lime juice and I leave the core of the avocado so it stays green. Try something different and instead of mooshing the avocado cut into cubes, that's good too.

6 tomatoes, chopped coarsely
2 jalapeno peppers, chopped finely
1 large onion, chopped
½ Cup chopped or sliced black olives
¼ Cup vinegar (optional: rice vinegar)
¼ Cup chopped garlic
1 bunch cilantro, chopped
1 tsp or to taste salt
¼ Cup vegetable oil (or olive oil)
2 ripe California Avocados, chopped
Instructions
Mix all ingredients at least one hour prior to serving.

Avocados, tomato, onion, cilantro, jalepenos, fresh lime juice, salt, and for a little fun try putting a little bit of cumin in it (my hubby is a chef and I pay attention :) )

i usually make it w/ salt and pepper! haha..u can also put some chopped onions, tomatoes, even some lemon juice to give it a kick.
