Who has a good recipe for carrot cake and frosting?

This is absolutely the best. Vanessa William's personal recipe

Vanessa William’s Carrot Cake

2 cups sugar
1 ½ cups salad oil
4 eggs
3 cups grated carrots
2 cups plain sifted flour
½ cup chopped nuts
2 tsp soda
2 tsp cinnamon
2 tsp baking powder
1 tsp salt
1 cup raisins

Mix sugar, oil, and eggs. Add carrots, mix well, add flour, soda, baking powder, cinnamon & salt, sifted together. Mix well. Fold raisins and nuts into batter and bake in 2 greased 9” round layer pans or 13x9 pan. Bake at 350 for 35 or 40 minutes.

Icing
1 package (8 oz) cream cheese
2 tsp vanilla
¼ cup margarine
1 cup chopped nuts
1 box (1 lb) confectioners sugar

Work cheese until soft, add softened margarine, beat in sugar gradually, add flavoring and nuts, mix & spread.

A good carrot cake recipe
This is a recipe for a good carrot cake that came from Peggy Fiedler some years ago. The orange rind in the icing is a post-Peggy innovation. The cake works well as a two-layer cake, but you'll need to make more icing than is called for in the recipe.

Cake
2 cups flour
2 cups sugar
2 teasp. baking soda
2 teasp. cinnamon
1 teasp. salt
3 cups grated carrots
4 eggs
1 teasp. vanilla extract
1 1/2 cup vegetable oil


Sift dry ingredients into a mixing bowl.
Mix in grated carrots, vanilla, eggs.
Beat, and add oil slowly.
Pour into a buttered 8"x12" pan, or two 8" diameter round pans.
Bake at 325 degrees for 35-45 minutes or until the center is done.
Let cool.

Frosting
8 oz. cream cheese
1 stick butter
1 tablespoon vanilla extract
1 lb. powdered sugar
rind of an orange
walnuts


Beat cream cheese, adding butter, orange rind, and vanilla.
Add powdered sugar in thirds, beating.
Frost cake, top with nuts.
Delicious!

I like chocolate frosting on my carrot cake, but I included a cream cheese frosting for you...

KRISPY's CARROT CAKE:
2 cups sugar
1 1/2 cups Crisco oil
4 eggs
2 1/4 cups flour
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons cinnamon
3 cups grated raw carrots
1 1/2 cups chopped walnuts
Mix in large bowl, sugar, oil and eggs; beat well. In separate bowl, sift flour, salt, baking soda and cinnamon. Blend dry ingredients into egg mixture. Stir in carrots and nuts. Pour into prepared pans. Bake at 300 degrees for about 60 minutes or until toothpick inserted in center comes out clean. Cool well before icing.

CHOCOLATE FROSTING:
1/2 cup margarine or butter, softened
1 3/4 cup confectioners sugar
1/4 cup Hershey's cocoa
1 teaspoon vanilla extract
3 Tablespoons cold water

Cream all ingredients together until spreading consistency.

CREAM CHEESE FROSTING:
1 (8 ounces) package cream cheese, softened
1/2 cup margarine or butter, softened
1 teaspoon vanilla extract
3 cups sifted powdered sugar
1 Tablespoon milk
Cream all ingredients together until spreading consistency.

buy the carrot cake mix but then instead of the water amount use baby food carrots(for infants beech nut)mix it with the remaining amount of water and evaporated milk ie: 1and one half water=half cup babyfood then half cup water then half cup of pet milk. absolutely delitefull you can also add a quarter cup raisins with cinammon to the mix as well good luck
