Sounds good to me...it's similar to another one I know of. You cook the breasts in a bottle of italian dressing then the last hour you cover them with a can of cream of chick soup, a cup of chick broth and 8 oz of cream cheese...it's VERY GOOD!

Probably not. If you want an italian like flavor, go to the gourmet cooking shop in the mall or something and get one of those italian rubs that comes in the circular tin (I forget the brand, sorry). Don't use chicken breasts in the crock pot. They don't have enough fat in them. Instead, use a whole cutup chicken in water. Cook this for at least 4 hours and then remove the chicken from the pot, strain the water and remove all the bones from the chicken, returning the meat to the water. Add in the seasoning and cook for another 4 hours (less if you are cooking on high). During the last 45 minutes of cooking, transfer everything in the crockpot to a pot on the stove. Add enough rice so that there is about half an inch to an inch of liquid covering it. Bring to a boil and simmer until it is done. If you want a creamy consistency, add the cream of chicken soup (cream of corn would be better though) to the whole thing AFTER it is cooked.

The recipe sounds okay but I would like to caution you that if the chicken doesn't cook quickly enough it can spoil and you will poison yourself. My mother did this when I was a child and almost died from the food-borne illness she contracted. Chicken, unless it is partially cooked in a skillet or something is not meant for slow-cooking. I'm sure there are alot of people who have done it successfully...I'm not saying you can't...I'm just saying be careful. And most of all make sure it gets to a minimum temperature of 170-175 degrees just to be on the safe side. The health dept. will tell you 165 degrees for at least 5 seconds...
My brother, dad and I wouldn't touch it 'cuz we thought it didn't smell good...my mother ate it to spite us and boy, did she pay!
Unless you cooked it on the high setting I would be afraid to touch it...and being that it was cooking while you were away I have the feeling you cooked it on low...no bueno, senora...

The words "Italian dressing" is what is bothering him, but I think it will turn out delicious. I would try it over rice , as you said, or since it is creamy, maybe some noodles....bon appetit!

I would serve it over noodles instead of rice. Maybe saute' some onions and bellpepper and mushrooms to mix in it or to put on top. And then top with cheese. Yes, it sounds good.

It sounds very good. I would add just a touch of white wine to it (I love to cook with alcohol, it adds such nice flavor). Or even champagne. Remember Emeril's rule of thumb. If you won't drink it, don't cook with it! (That means NO cooking wines, they are much to salty and the flavor leaves alot to be desired!)
