I just opened a can of coconut milk, it was really 'gloopy' at the top. Can it go bad in the can and how would I know??

No, I dont think so, but will you make me a pina colada too?? I use one called coco lopez and a couple of time it looked gloopy when I opened it. Just shake it up first. If it sits on the shelf for a long time it will seperate, and get "gloopy". Shouldnt be anything wrong with it though, as long as the color hasnt changed and it doesnt have a funky smell. Dont forget the little pink umbrellas!

Anything in a can that is opened up has a shelf life. The best way to store anything out of a can, is to put it in a clean glass on plastic container and refrigerate. You will see mold if it is bad, always taste for freshness. If you are concerned with it being spoiled out of the can, the product would spray up at you once the can is pierced, canned bacteria is called botulism, and the can is visibly swollen. Coconut milk has solids just like milk after the CREAM has been removed, so the thick gooey stuff is just the coconut oil solidified.
