The chances of them tipping over is very low. The engineers who design them also test them against all type of weather and water conditions and engineer in things to prevent accidents.

Yes and no. The Norwegian Dawn was hit by a rouge wave a few years back, but never rolled over. It did however suffer some damage. All cruise ships (like the Crown Princess) are designed to roll up to a high angle, and not tip over. There even tested at these angles before going into service. The only way a modern day ship will tip over is if the wave is unnaturally large.

While anything is possible...it is very unlikely. With the high technology, such as doppler and radar onboard, a cruise ship can almost sail themselves without error. Don't worry, go, have fun...you won't be disappointed.
