Canola oil cooks at high temperature and has less saturated fats than most other oils.
Canola can be found in all the main grocery stores.

You can cook with olive oil just use the light olive oil and save the extra virgin for low heat cooking or on pasta or salads.

No oil is low in fat, as oil is fat, but there are many oils that are better for you than others. If you're going to be doing high heat cooking, such as stir frying and deep frying, canola is good. The fats it has are the fats that are good for your heart, and not the kind that raise cholestorol. For lower heat cooking, such as sautees, sauces, or salad dressings, olive oil is very good for you. Olive oil burns if it gets too hot, so it's not good for frying, but it has great flavor and is very healthy.
I've heard of an oil called Enova, that supposedly contains oils that your body has a hard time breaking down, so you don't absorb as much of the fat, but I'm wary of that... It makes me think of that Olestra, and I know that stuff wreaked havoc on many a stomach... (mine included!) I'd stick with the real stuff, and just not use as much.

There's no such thing as LOW FAT cooking oil. Oil is fat. What you want is a healthy oil like Olive or Canola.
