Your weight sounds great for your height. You are eating very healthy and I don't think you should change your diet. You might want to look into pilates, kick boxing, or weight lifting to tone your muscles.

You don't need to lose too much weight, only 15 pounds or so. You do, however, need to lift weights to gain muscle to replace the flab. If I were you I'd try to incorporate more lean protein into your diet like skinless chicken, fish, and lean red meats with the fat cut away. (a good way to cook chicken with flavor and all the nutrients is to put it in an alluminum foil pouch with salt, pepper, onions, red and green peppers, and italian seasoning, and just a tiny pat of butter. Fold it up tight and bake for 30 minutes. ) Delicious!

It sounds pretty good. Just remember portion control is part of it.
As to tone, start weight lifting. Learning how to work to muscle failure will build muscle and tone you very, very quickly. Especially at your age. You will probably drop a pant size or two even if your weight doesn't change.
As you build muscle, your body will burn more calories making it easy to lose any fat you wish to drop AND help keep it off.
Women don't easily get bulky like male weight lifters; in fact most women can't build that bulk even if they want to, so don't worry about ending up looking like a man.
The trainer in the gym will help or get home equipment and a good book. Just remember that if you aren't working hard at it, you won't get fast results.

yes, any one with that much committment is fantastic. It seems like you are eating all the right stuff, just remember, its okay to go off schedule sometimes.
