Atheists don't believe in any god or religion, and they generally kind of shake their heads in disbelief at people who choose to.
Christians try and convert everyone to their religion because they feel it is their moral duty to try and save people, seeing as if they don't believe in their God they're going to hell.
Who is more tolerant in the end?

In my experience, atheists are more tolerant of people.
No rational person can say that all ideas are equally true, but at least atheists don't condemn people to eternal hellfire for not believing in God.

One would hope that most well-educated people are familiar with the history of the Inquisition, the extermination of alternative forms of Christianity, the persecution of folk healers during the period of the Witch Trials, and the enslavement of native peoples as part of "God's plan."
Atheists are not intolerant just because they choose to use their intellects and insist on credible evidence to support claims of supernatural agency or the historicity of mythic characters from the Bible. However, there are times when they are perhaps rude in asserting their values.
Christians, on the other hand, have a long and bloody history of intolerence towards non-Christians and even towards other Christians of different denominations. Clearly, atheism is more tolerant given its basis upon rationality.

Both statements included with your question are wide generalizations. Not all atheists are accepting, nor do they all shake their heads in disbelief. Not all Christians try to convert everyone. There is tolerance and intolerance in every group, regardless of religious preference or lack thereof. Tolerance is an entirely individual concept.

I'm a Christian, but I also know how irritating it is to have someone impose their spiritual beliefs on you (buddhists handing out flyers on campus grounds, for example), but I try to give a good example for people to follow. If someone starts seriously asking me about Christianity and what it means, THEN I'll divulge everything I can.
I don't why, but I think that atheists are less tolerant that Christians. Being agnostic and just not believing in a higher diety (or being unsure of what to believe in) is one thing, but most atheists I've seen try to spread their own beliefs that NOTHING created the Universe and that everything is pointless. Atheists have become religious in their unreligiousness, apparently. :P

when it comes to actually learning about and understanding other religions, atheists seem to have a more well-rounded education and can accept why people choose to believe what they believe, where as Christians automatically assume the other religions are wrong.

There is a huge difference between tolerance and acceptance. We tolerate all religions (to live in harmony) but we don't accept them as being true.

it depends on what you mean by "tolerant" (to some people, disagreeing with them means you're intolerant). the christian should definitely love people of other religions more.
