Fritatta.

It is like a quiche with no crust.

In an oven proof skillet, saute whatever meats, veggies, etc that you like for your filling. I like to use onions, frozen hashbrowns and ham or leftover steak. Beat some eggs together with milk, and pour over, then sprinkle with cheese...I use cheddar.

Bake at 350 until it is set and kinda puffy and brown at edges. Cut in wedges and serve hot or at room temp.
