Andouille Jambalaya
Yield: 6 Servings
Ingredients
2 tb vegetable oil
2 lg onions; chopped, divided
3/4 lb andouille sausage; thinly
-sliced
1 md green bell pepper; cored,
-seeded and
-- coarsely chopped
1 celery rib; chopped
2 garlic cloves; minced
1 c long-grain white rice
1 cn -- (14 1/2-ounce)
-- crushed tomatoes in
-- puree
2 ts dried oregano leaves
1 ts tabasco sauce
1/2 ts dried thyme leaves
1/2 ts cayenne pepper
1 bay leaf
2 c chicken broth
1 lb medium shrimp; peeled and
-deveined
Instructions
1. Heat the oil in a heavy-bottomed 2-quart saucepan over medium heat.
2. Add half the onions and cook, uncovered, stirring occasionally, until
the onions are caramelized but do not burn, about 5 to 10 minutes. 3. Add
the remaining onions, the sausage, green pepper, celery and garlic. Cook,
stirring frequently, for 5 minutes.
4. Add the rice and stir to coat with oil. Add the tomatoes, oregano,
Tabasco sauce, thyme, cayenne, bay leaf and chicken broth.
5. Bring to a boil over high heat, cover, reduce the heat and cook until
liquid is absorbed and rice is tender, about 25 minutes.
6. Add the shrimp, cover and cook an additional 5 minutes over low heat,
or until the shrimp are pink. Taste and adjust seasoning.

I've made this recipe, it's seriously spicy & yummy. If you already own Emeril's Essence, you can use that and skip making your own blend.
Jambalaya - Emeril Lagasse
Prep Time: 15 minutes
Cook Time: 35 minutes
Yield: 4 servings
12 medium shrimp, peeled, deveined and chopped
4 ounces chicken, diced
1 tablespoon Creole seasoning, recipe follows
2 tablespoons olive oil
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/4 cup chopped celery
2 tablespoons chopped garlic
1/2 cup chopped tomatoes
3 bay leaves
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
3/4 cup rice
3 cups chicken stock
5 ounces Andouille sausage, sliced
Salt and pepper
In a bowl combine shrimp, chicken and Creole seasoning, and work in seasoning well. In a large saucepan heat oil over high heat with onion, pepper and celery, 3 minutes. Add garlic, tomatoes, bay leaves, Worcestershire and hot sauces. Stir in rice and slowly add broth. Reduce heat to medium and cook until rice absorbs liquid and becomes tender, stirring occasionally, about 15 minutes. When rice is just tender add shrimp and chicken mixture and sausage. Cook until meat is done, about 10 minutes more. Season to taste with salt, pepper and Creole seasoning.
Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly.
Yield: 2/3 cup

Spicy Rice Casserole
1 lb Pork sausage, mild, bulk - I use hot italian sausage
1 ts Cumin, ground
1/2 ts Garlic powder
2 md Onions; chopped
2 md Green peppers; chopped
2 Beef bouillon cubes
2 c Boiling water
1 Jalapeno pepper;
-seeded and finely minced
1 pk Long grain and wild rice mix
-quick-cooking (6 1/4 oz)
In a large skillet, cook sausage, cumin and garlic powder, stirring often. Drain. Add onions and green peppers; saute until crisp-tender. Dissolve bouillon in water; add to skillet. Stir in jalapenos, rice and rice seasoning packet; bring to a boil. Reduce heat and simmer, uncovered, 5-10 minutes or until the water is absorbed.

Not really a recipe, but Zatarains' is great. Add 1/2 lb shrimp, 1 lb smoked sausage, 1 lb pork stew meat to 2 boxes. Add extra cayenne to heat it up. Not bad at all, in my opinion.
