Frozen Blended Cocktails
1 1/4 Cups of cocktail mix(Appletini, Cosmopoltian or Lemon Drop), 3 fl. oz. vodka, 1 1/2 cups ice cubes
Pour the cocktail mix into ice trays and freeze until firm, 2 to 3 hours place 4 martini glasses in the freezer for at least 20 min or up to 2 hr. In a blender combine the cocktail mix ice cubes, vodka and regular ice cubes. Pulse just until the ice is completely crushed anbd the mixture is slushy about 10 seconds
Divide the mixure among the chilled martini glasses and serve immediatly serves 4

Mexican Shrimp Cocktails
Mexican shrimp cocktails
Beat the heat! Skip using the stove or oven.
Ingredients:
2 lb shrimp, cooked, peeled and deveined. Chilled.
4 med tomatoes, diced
1 bu cilantro, finely chopped
1 fresh jalapeno, diced
2 cloves garlic, crushed
1 onion, diced
1 large avocado, diced.
1 large bottle ketchup
1 jar cocktail sauce, hot or mild
hotsauce, like tabasco or tapatio
6-8 lemons
saltine crackers
In a bowl, add shrimp and squeeze lemon juice from 1 or 2 lemons on it. Put back in fridge.
In a large stock pot, add 4 cups cold water.
Add the entire bottle of ketchup, cocktail sauce, cilantro, jalapeno, garlic, onion, tomatoes. Stir content until completely mixed.
Squeeze 4 lemons into the mix. Add hot sauce to the mix according to taste. If you like it hot, add 6-10 tsp. If you want it mild, add a 3-4 shakes (approx 2 tsp).
In a bowl, Add the tomato mixture into the mug then add a serving of the chilled shrimp and serving of avocado. Serve chilled and with crackers.
To make the cocktail hotter, add more hot sauce.
To make tangier, add more lemon juice and ketchup.
Serves 4-6

Thai noodle salad
Cook some rice stick noodles (flat kind, like linguini) until they are al dente, then drain, rinse with cold water to stop the cooking, drain well and coat with the following dressing and serve chilled or at room temp:
1 part dark sesame oil
2 parts dark soy sauce
1 part peanut butter
Toss with some sliced green onions, snow pea pods, chopped cilantro, chopped roasted peanuts, sliced radishes, diced jicama, or whatever crunchy vegetables you have around. Fresh green beans, bits of raw brocoli, cooked peeled shrimp or slivers of leftover broiled or baked fish, beef or pork . . . it's very versatile!

Okay..easy enough and tasty too.
Chicken salad sandwiches. 1 can of good brand white chicken breast drained. Mix in bowl with, mayonaise, relish, salt and pepper. Put on bread. Yummy....especially for that SOB that comes home from work and wants something now... hehe

1 can creamy chicken verde soup by campbells
1/2 cup water
1 tsp garlic powder
2 cups cooked chicken cut up
1/2 cup shredded cheese (I use taco blend but whatever floats your boat)
4 8in flour tortillas cut into strips
mix water, soup, garlic, and chicken in 8x8 baking dish...mix in flour tortillas and a little cheese if you want...top with cheese...bake at 350 til warm and cheese is bubble (about 20 minutes) I think the recipe is on the back of the can of soup

1 chicken. put in lg pot 1/4 to 1/2 full of h2o. cook few hours till chicken falls apart.also add carrots and celery w/chicken.season good w/s,p and any other seasoning you like. add tiny shell or other small pasta till done. prior to this tke out your chicken and pick apart and add favorites back to the soup. delicious and cheap . it lasts a long time and you can freeze portions in freezer bags

Take 1 cup OJ
1 cup Barbeque Sauce
1/4 cup lemon juice
1/4 cup lime juice
And mix them all together. (Fresh squeezed is better, but store bought is good and inexpensive too)
Then maranade chicken breast in the sauce overnight, grill the chicken for best results.

Take fresh tomatoes, wash and slice to desired thickness/thinness.
Toss lightly with coarse salt and olive oil and fresh or dried basil.
Arrange on a plate and top with slices of fresh mozarella cheese and balsamic vinegar.
Soooo yummy!
