The reason why they turn black is because of an oxidation reaction. The air turns it brownish after a while that's all. It's not really "bad". But I also have heard that the acidity of lemon will keep things fresher longer. But you can always just pout a cut avocado in a ziploc back and just scrape the brown parts off before eating.

but if u put them in lemon juice they will taste like lemon.....not a good favor in tacos...anyways if u leave the seed in the avocados and leave them unopened until use they should be fine. but anyways we live on the border so when we bring good mexican avocados we can't pass over the seeds so the avocados have to be opened well this fruit market where we get them as a trick that works. what u do is as soon as they open the avocados they get saran wrap and wrap the avocados really well, so that the air doesn't get to them....the stay pretty and green for a long time so try it! p.s they use about a foot or two of wrap so don't be stingy with it!

Avocados does not ripen on the tree.The oil quantity in the fruit gets higher.When you pick them cut the stem about 5mm from the fruit to prevent it starting to rot at the stem.Once picked keep them refrigerated at about 5 degrees C.To ripen avocado in about two to three days wrap it in newspaper and keep in a dark warm place. Unused avocado that has been cut can be stored in plastic cling film with the seed still in place.Remember though to sprinkle some lemon juice on the cut side.

once they are ripe, put them in the fridge. When you cut them, cut them in half with the peel on and leave the pit in the half you don't use. When making guacamole, leave thte pit in the mix until ready to serve -- the pit is suppoed to help that. Also, obviously, keep the cut avacados covered and unexposd to air.
