Biscuits and gravy typical southern breakfast
Sausage Gravy
1C flour
2C milk
1Lb ground sausage—Jimmy dean or country sausage work fine whatever suits you is the right sausage.
Crumble the sausage and cook until well done. Remove the sausage and leave the grease. Keeping the heat on the pan at a little above medium heat, add the flour a bit at a time to make a good brown roux. Back the heat off. Now, add the milk slowly and bring almost to a boil, and add the sausage back in. Simmer at a very, very low heat . If the gravy thickens too much before serving, bring the heat back up and add a Little milk at a time until the right consistency is reached (i.e., one you like).
Serve the sausage gravy over separated biscuit top n bottom halves(make from scratch or use canned biscuits). Scrambled eggs work good with it too.I also use sausage in my spaghetti sauce it gives it a nice flavor when you add it to the ground beef

Sausage Stuffing-Add 1/2 pound of browned, crumbled sausage to any store bought stuffing mix. Cook as directed on the box. My family loves it. I sometimes just serve this with a salad.
Sausage Balls- These are neat treats and also great party snacks. Put 1 pound of sausage in the bottom of a large mixing bowl. Add 1 3/4 cup bisquick or other baking mix to the sausage using a strong fork or your fingers. Once mixed, add 1/2 pound grated cheddar cheese. Roll the mixture in small balls. You can freeze them in ziploc bags or bake them in a 350 oven for 7-10 minutes.

Country Sausage Casserole
6 slices white bread
butter
1 pound hot pork sausage
1 1/2 cups shredded Colby cheese
6 eggs beaten
2 cups half and half
1 teaspoon salt
pepper
Remove crusts from bread and spread with butter. Place in a greased 13 x 9 x 2 casserole.
Brown sausage, stirring to crumble. Drain well. Spoon over bread slices. Sprinkle with cheese. Combine eggs with half and half, salt and pepper. Beat well. Pour over cheese.
Cover casserole and chill overnight.
Remove from refrigerator 15 minutes before cooking. Bake casserole uncovered at 350° F. for 45 minutes until set. Serves 8.

This won't use all of it unless you are cooking for a crowd but it is yummmmmy!
Creole Stuffed Chicken Breasts
INGREDIENTS:
1/2 pound smoked sausage, sliced thinly
1/2 pound fresh button mushroom
3 tablespoons chopped green onion
1 teaspoon minced garlic
4 tablespoons blue cheese salad dressing, divided
3 skinless, boneless chicken breasts
1 tablespoon Cajun-style seasoning
DIRECTIONS:
1. To Make Stuffing: Brown sausage in a large skillet over medium high heat; once sausage starts to brown, add mushrooms and saute for 5 minutes, then add green onion and garlic and saute for another 2 minutes. Remove stuffing mixture from heat, put in a food processor and add 1 tablespoon salad dressing. Process slowly in processor, roughly chopping.
2. Preheat oven to 375 degrees F (190 degrees C).
3. Cut 2 inch slits in sides of chicken breasts and stuff with as much stuffing as breast will hold. Season both sides of breasts liberally with Cajun-style seasoning and sear in a hot skillet for 1 to 2 minutes per side, then place in a lightly greased 9x13 inch baking dish. Top with leftover stuffing and remaining 3 tablespoons salad dressing.
4. Bake at 375 degrees F (175 degrees C) for 30 minutes or until chicken is cooked through and juices run clear.

If its loose sausage (not in a casing) then do this.
Saute it with a some diced onion and garlic. Add some olive oil to taste...then add a can of tomato paste and stir it up. Finish it with some fresh grated parmigian or any other white gratable cheese
If you want it pink add some heavy cream and simmer a bit
add any spices you wish to try of course
Toss this with some farfalle (bowties)
You will enjoy it

Make sausage gravy and biscuits, sausage patties on the side with bacon and hash browns.
Or fry the sausage and crumble - scramble some eggs and put the sausage in there and and add cheese on top and put it inside tortillas for breakfast burritos.

Hi,,,,, is it link sausage or whole.... (like hamburger).....
If it is link, fry it slowly,,, (so it is cooked good) and cook a pot of red beans,, or go buy them at the store....(get the crock pot) or a big boiler,,,, cook the beans and cut up and put in the sausage after frying or bakeing it done .....let warm up,,,, make boiler of rice,,, pour sause over rice and serve,,, french bread is good with it....
If it is whole.... cook until done,,, drain grease,,, (remember that above also) and mix sweet cream corn, tomato sauce, and flavor to taste... and serve as a dish on rice or potatos....

don't add any water....brown it in a large skillet, add a dash or two of pepper to taste.....remove sausage from pan, but don't drain all the good grease...add a tablespoon of margarine or butter heat on med, then add about 1/4 to 1/2 cup of flour....cook until it gets nice and brown and looses the raw flour taste....then add about one or two cups of milk....continue cooking until it gets thick...add the sausage back into pan..bingo you have sausage gravy...pour over toast or biscuits and enjoy.

you can use sausage as you would hamburger.I use it making bean and sausage burritos.all you need then is some cheese and sourcream
