Actually, that is in fact the Synovial fluid that cushions the vertebrae being "forced" off the joints. The cracking sound you hear is lactic acid being pushed out of the joint and put back into the lymphatic system as waste.

I think its the air pockets being forced out of the spaces between the bones. Its forced out when the bones move back into position.
