i am looking for some new cookie recipes and i was wondering who has a favorite cookie and i want to see if i can have the recipes for them

My 3 favorite cookies are:

KRISPY's CARROT COOKIES:
1 cup shortening (part soft butter)
3/4 cup sugar
2 eggs
1 cup mashed cooked carrots
2 cups flour
2 Tablespoon baking powder
1/4 teaspoon salt
3/4 cup shredded coconut
Mix shortening, sugar, eggs and carrots. Blend in flour, baking powder and salt. Stir in coconut. Drop dough by teaspoons; 2 inches apart onto lightly greased baking sheet.
(I use parchment paper instead)
Bake @ 375 degrees for 8 to 10 minutes or until no imprint remains when touched. Remove from baking sheet and cool on wire racks. Frost with Orange Frosting.

ORANGE FROSTING:
3 Tablespoons soft butter or margarine
1 1/2 cups confectioners sugar
2 Tablespoons grated orange peel
up to 1 Tablespon orange juice
Blend butter and sugar together. Stir in orange peel and juice. Beat until frosting is smooth and of spreading consistency. (I usually double the frosting recipe per batch of cookies)

JAM BARS:
1 1/2 cups sifted flour
1/2 teaspoon baking powder
1/2 cup butter
1/2 cup sugar
1/2 teaspoon almond extract
1 egg
3/4 cup jam or preserves
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
Sift together flour and baking powder in a small bowl and set aside.
In a large bowl cream butter, sugar and almond extract. Beat in egg thoroughly.
Add sifted dry ingredients to butter mixture and stir to blend.
Spread a little less than half the dough into a greased baking pan
(about 11 x 7 x 2 in.)
In a small bowl, mix jam with cinnamon and ground cloves. Spread over dough. Drop remaining dough in blobs over jam; spread carefully with small spatula. Bake in hot oven at 400 degrees for about 20 minutes. Put on rack to cool; cut into squares.

PRIDE OF IOWA COOKIES:
1 cup shortening
1 cup brown sugar, packed
1 cup granulated sugar
2 eggs, beaten
1 teaspoon vanilla extract
2 cups flour, sifted
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup flaked coconut
1/2 cup chopped walnuts
3 cups rolled oats, quick-cooking
Cream together; shortening and both sugars.
Beat in eggs and vanilla.
Sift flour, baking soda, baking powder and salt and add to egg mixture.
Blend well. Stir in coconut, walnuts and rolled oats. Drop by teaspoonfuls onto greased cookie sheet. Bake at 375 degrees for 8 to 10 minutes. Cool on wire racks.

These peanut butter cookies are one of my family's favorites, and they are so easy to make.

Quick Peanut Butter Cookies

1 cup peanut butter
1 cup sugar
1 egg

Mix all ingredients together. Roll into balls and flatten with a fork dipped in water. Bake at 350 degrees for about 8-10 minutes. Enjoy!

Store bought cookie- Normandie brand chocolate cookies. Home made my mom's recipe for Porcupines and my grandmothers recipe for Molasses cookies.

Here is a recipe for Porcupine Cookies

1 cup pecan halves
1 tablespoon butter, melted
2 1/3 cups sweetened shredded coconut
1/2 cup chopped dried apricots
1/2 cup semi-sweet chocolate chips
7 ounces canned sweetened condensed milk

Preheat oven to 325 F

Line a cookie sheet with parchment paper or use a non-stick spray.

Toss the pecans in the melted butter to evenly coat. Spread on the an ungreased baking sheet and bake 10 to 15 minutes or until golden and aromatic. Set aside to cool, then roughly chop.

Add the chopped pecans and the remaining ingredients in a bowl and stir until moistened.

Spoon about 2 tablespoons of batter for each cookie onto the parchment lined cookie sheet and gently flatten to circles of about 2 1/4 inches.

Bake 10 minutes or until the coconut turns very pale golden, being careful not to over brown. Transfer to racks to cool.

Makes 36 to 40 cookies

Molasses Cookies

1/2 c. butter, softened
1/2 c. solid vegetable shortening, softened
1 1/2 c. sugar
1/2 c. unsulfured molasses
2 eggs lightly beaten
4 c. flour
1/2 tsp. salt
2 1/4 tsp. baking soda
2 1/4 tsp. ground ginger
1 1/2 tsp. ground cloves
1 1/2 tsp. ground cinnamon
Granulated sugar for coating cookies

Preheat oven to 350 degrees. Cream butter, shortening, sugar in large bowl. Beat in molasses and eggs until thoroughly combined. Set aside. In another bowl, mix flour, salt, baking soda, ginger, cloves and cinnamon. Gradually stir the flour mixture into the butter mixture until blended and smooth. With sugar coated hands, roll pieces of dough into 1 1/2 inch balls. Roll the balls with additional sugar and place them about 2 1/2 inches apart on ungreased cookie sheet. Bake for 13 minutes. Cookies will flatten as they bake. Remove cookies from oven and immediately cool on wire racks.
Makes about 40 cookies

Chewy Chocolate-Chip Cookies:

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup packed brown sugar
2 tablespoons light butter
1 teaspoon vanilla extract
4 large egg whites (at room temperature)
1/2 cup granulated sugar
1/3 cup light-colored corn syrup
1 1/4 cups semisweet chocolate chips
Cooking spray

Preheat oven to 375°.

Lightly spoon flour into dry measuring cups, and level with a knife. Combine flour, baking soda, and salt. Beat brown sugar, butter, and vanilla extract at medium speed of a mixer until well-blended (about 5 minutes).

Beat egg whites until foamy using clean, dry beaters. Gradually add granulated sugar, 1 tablespoon at a time; beat until soft peaks form. Add corn syrup; beat until stiff peaks form. Fold brown sugar mixture into egg white mixture. Add flour mixture; stir in chocolate chips.

Drop by level tablespoons 1 inch apart onto baking sheets coated with cooking spray. Bake at 375° for 10 minutes or until golden. Remove from oven, and let stand 5 minutes. Remove cookies from pans, and cool on wire racks. Store loosely covered.

Yield: 4 dozen (serving size: 1 cookie)

I love Snickerdoodles but I can't bake them to good so I buy the Pepperiddge Farm brand they are delicious.
