Tossed Salad, Mashed Potatoes and

CORN FRITTERS:
2 eggs (yolks separated from whites)
1 cup fresh corn kernals or drained can corn
1/2 cup flour
1/2 teaspoon baking powder
1 teaspoon sugar
1/2 teaspoon salt
dash paprika
Beat egg yolks well. Beat in corn kernals. Sift, then measure flour. Resift with baking powder, sugar, salt and paprika. Mix dry ingredients with yolk mixture. Beat egg whites stiff but not dry. Fold egg whites gently into yolk mixture.
Fry spoonfuls of batter on a greased griddle or skillet until golden brown. Serve with butter.

Spanish Rice
Makes 4 servings

Ingredients:

2 tablespoons butter
2 tablespoons yellow onions, chopped
1 cup rice, white, long grain
1/2 cup tomato juice
1 cup water
2 chicken bouillon cubes
3 dashes bottled hot pepper sauce
2 teaspoons chili powder
1 pinch black pepper
1 Roma tomato, chopped
2 tablespoons red bell peppers, chopped
2 tablespoons green bell peppers, chopped

Preparation:

In a saucepan that has a tight fitting cover, melt the butter and sauté the onions until soft. Add the rice and stir to coat the rice with butter, then add the tomato juice, water, bouillon cubes, pepper sauce, chili powder, and black pepper.

Stir to dissolve the bouillon cubes and bring to a boil. Once the liquid reaches a boil, reduce heat to its lowest setting, cover, and go away for 25 minutes.

Do not stir, do not look under the lid, do not worry !!

Once your timer goes off, remove the pan from the heat, lift the lid off quickly and throw in the tomatoes, and chopped peppers and put the lid back on quickly.

Do not stir, do not taste, do not worry !! Allow the rice to steam in the pan for 20 more minutes.

Now... If you didn't cheat and if you didn't worry, your Spanish rice should be perfect. Stir in the tomatoes and peppers and serve with a smile. If you did cheat...Well, Shame on you !!!

I made this for my wife the other evening. We like a lot of color and textures . I find they help make a meal even more. I did a spicy black bean and rice (with Sazon) as my offical side dish Also served a Spring salad with tomatoes. With the chicken and beans cuckes and cilantro.

I love the corn on the cob recipe my Brazilian neighbor gave me.

On a piece of heavy duty foil, spray a bit of Pam coating. Clean and wash fresh corn on the cob. Roll the corn in a dish of parmesan cheese. Sprinkle the cob with finely chopped jalapeno peppers. Place the corn on the foil and wrap tightly. Grill the corn as you cook the chicken.

put a little extra water when you are cooking it, then drain the water and use it in your water to make rice. Corn with diced tomatoes, bell pepper and onion with a little chili powder is good, and refried beans are always a yummy side dish. you could make some cheese quesidillas (sp?), or...ooohhh...lipton makes many great rice or pasta side dishes

I would go with something simple if you want to put the emphasis on the chicken... If you want the chicken to stand out then dont over do your sides... personally i would do grilled squash and peppers and or maybe some steamed broccoli

You might also consider sweet side dish, especially if your chicken is spicy, like a fruit salad or cut up mango or pineapple.
