I need some new recipes but looking in a cookbook you have no idea how good any of the recipes are. Help me out and give me your most favorite. And please no desserts! Thanks!

Parmesan Chicken
Ingredients *
3-4 Chicken Breast-Skinless
1 cup Italian Bread crumbs
Seasonings-What ever you have and like (garlic,salt, pepper, thyme)
2T butter-melted
1T olive oil
Mozzarella or Provolone Cheese slices
Spaghetti sauce (I make my own but jar sauce can be used)
Parmesan Cheese (grated)

Wash chicken breast. Pat dry with paper towel. Dip chicken breast into butter then coat with breadcrumbs and seasonings. Place on plate for about 5-10 minutes or while olive oil is heating in a pan. Brown the chicken on all sides using an oven proof pan (If you do not have one then you'll need to transfer the browned chicken to an oven proof dish) top with Cheese slices spoon sauce over chicken and sprinkle with Parmesan cheese. Bake for about 25 minutes at 350 degrees or until chicken is cooked through. Serve over cooked noodles or with cooked broccoli.

EASY POT ROAST, COLE SLAW AND JELLO:
Feeds 3-4

Pot roast:
3 lb chuck roast
1 pkg lipton onion soup mix, dry
1 can cream mushroom soup, campbells
2 celery stalks, diced
1 onion, diced
3 whole carrots, peeled and cut
4 potatoes, peeled and cut in 1/4
1 crushed garlic clove
2 tbsp flour

1 Reynold's slow cooker liner, optional
If using a large slow cooker, a liner makes cleaning up a snap!

If no slow cooker, use a large oven safe pot, add the can of cream mushroom soups, 1 additional can of water, the lipton dry soups, flour and mix the ingredients well with a wisk.

Add the roast and the garlic. Mix around til covered with soup mix. Add the onions and veggies.

If using a crock pot, Add water to barely cover the veggies (remember the water level may go up during cooking!).
Cover and turn crock pot to med/low. Cook 6-8 hours and it will be so tender!

If using a oven safe pot, put in oven covered (with lid or foil) at 325 degrees. Cook for 3 hours. Check on roast. When pierced the juices should run clear. You can test it by slicing the middle. If not ready, cook uncovered for 30-45 more minutes.


MEXICAN COLE SLAW
1 avocado, ripe, peeled and diced
1 bunch cilantro, finely diced
1large tomato diced
1 cabbage, sliced and diced
1 cup diced celery (or a whole bunch of celery)
1 brown onions, diced
1 fresh jalapenos, seeds removed then diced
Mayo
salt/pepper to taste

In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.
Add the avocado then 3 big spoonful of mayo or just enough to moisten to your taste. Mix well. Chill for 1 hour and serve cold

JELLO DESSERT
1 pkg large jello, same flavor
1 tub coolwhip
1 c fresh fruit

In a non metalic bowl, prepare the jello as on the package but use 1/2 cup less water per package.
Add fresh fruit like fresh strawberries, grapes, chopped apples. Let it gel for 3-5 hours. Mix up the jello and add 1 tub of cool whip. Add more if desired. Mix well, and its like an ambrosia.

Put the mix in a glass, and top with more fresh fruit or coolwhip

This pasta dish is my son and his friends' favorite. They request I make it every Friday night.

Boil your favorite pasta (linguini, angle hair, fettucini, spaghetti) as directed on package.

In a wok or skillet heat 2 Tbsp olive oil. Add 4 cloves of minced garlic and 1/2 cup minced green onions. Slowly brown while stirring. Add 2 cups of finely chopped sun dried tomatoes (I use scissors to cut the tomato into fine pieces). Add 1 cup white wine (any type but dry wine seems to taste better). Continue cooking until the wine is reduced in half and the tomatoes are plumped. Add 1 jar of commercial Alfredo sauce (any brand) and stir. Continue until sauce is bubbly.

Pour the sauce over the pasta and top with fresh grated Parmesan cheese. This basic recipe is great to use and modify by adding chicken, shrimp, or steamed vegetables.

This is my own recipe and it's delicious, if I do say so myself!

Make 1 cup of rice.
While rice is cooking, mix together one bag of frozen oriental vegetables and 6 ounces of bagged grilled chicken (in the freezer section of the grocery store). Then stir in 1/4 cup of low sodium soy sauce and 1/4 cup of Sugar Twin brown sugar (or regular brown sugar). To spice it up, I sometimes add a dash of yellow mustard.

After everything is cooked, stir it together in a big bowl. The recipe that I listed is just for 1 serving.

i am not a huge fan of pork but my husband loves it so i make it this way so it doesn't dry out

i take 2 pork chops (yhick or thin, works both ways) i put a bit of extra virgin olive oil in a copper bottom skillet i heat the oil then i put the chops in with fresh basil, parsley and oregano, and curry powder and i sear both sides of the pork chop then i put the skillet in the oven at 375 and finish cooking for about 20 min

it comes out so juicy it is unbelievable. just make sure your skillet can go from stove top to oven, that is very important. serve with rice and steamed veggies and it is soo good. and pretty healthy too.

An old friend from high school's mom made this awesome chicken and rice.

Cook rice (I use brown rice). Spread cooked rice on bottom of baking dish. Place uncooked chicken parts seasoned with salt, pepper, garlic, paprika on top. Bake in oven for 1 hour at 375 or until completed cooked. Yummy rice and yummy chicken.

Payasam

Take hot water...

Take one cup steamed rice

mix it...add sugar...add honey...add nuts and fruits..

mix it again...

boil it for two mins...then keep in warm place for five mins....

then put it in Fridge for 10 or 15 mins

take it out....

now "Payasam" Ready...

mmmm yummy yummy
