Candied Walnuts (from Lois Denny)

Ingredients:
1 cup sugar
1/2 teaspoon cinnamen
1/8 tsp cream of tarter
1/4 cup water
1/2 tsp vanilla
1 1/2 cups walnuts

Directions:
Bring 1/4 cup water to boil in a sauce pan. Add 1 cup sugar, 1/2 teaspoon cinnamon, and 1/8 teaspoon cream of tarter. Boil on medium heat until mixture reaches 240 degrees or forms a medium soft, pliable ball when dropped in cold water. Remove from heat and add 1/2 teaspoon vanilla. Add 1 1/2 cups walnuts and stir until well coated. Pour onto waxed paper or cookie sheet and separate. Allow to dry and cool.

Candied Spiced Walnuts
Yield: 2 Servings

Ingredients

1 c sugar
1/4 ts salt
2 ts cinnamon
1/2 ts nutmeg
1/2 ts cloves
1/2 c water
2 c shelled walnut halves

Instructions

Boil all ingredients except the walnuts to 236 degrees on a candy
thermometer (soft ball stage). Remove from heat and add the walnuts.
Stir until creamy. Turn out on waxed paper. Using 2 forks, separate
walnuts. Let dry. Then store them in an airtight container Makes
about 2 cups.

start with 1 part sugar, 1/4 part water with a pat of butter (not more than a tbls). boil together to make a simple syrup and add in a dash of vanilla, a tsp or so of cinnamon and a pinch of salt. once the candy starts to bubble and pop (like lava), dump in your walnuts. stir together, quickly with a wooden or slotted spoon.

dump mixture onto a greased cookie sheet. if there is extra candy, try NOT to dump it onto the pan ... add in more walnuts to coat, or just wash it down the sink. it doesn't cook well by itself.

pop the tray into a 350 degree oven and bake for about 10-15 minutes, until the walnuts are golden brown and the candy looks tacky. remove from oven and let cool on pan. once cool, they will also harden up and you may place them in a ziploc or any other container. they will keep for up to a month, if they last that long!

6 tablespoons milk
1 teaspoon vanilla extract

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Spread nuts in a single layer over a baking sheet. Roast for approximately 8 to 10 minutes, or until the nuts start to turn brown and the smell of roasting nuts fills the kitchen.
Stir together sugar, cinnamon, salt, and milk in a medium saucepan. Cook over medium-high heat for 8 minutes, or until the mixture reaches the soft ball stage of 236 degrees F (113 degrees C). Remove from heat, and stir in vanilla immediately. .
Add walnuts to sugar syrup, and stir to coat well. Spoon nuts onto waxed paper, and immediately separate nuts with a fork. Cool, and store in airtight containers.
