Make a leek and potato soup
Poach your smoked haddock in milk
Flake the haddock removing any skin and bone
Add to your leek and potato soup along with the milk the fish was poached in.
Add some chopped parsly or chives, and a dollop of cream if you are feeling extravagent.
Serve hot as a first course or with crusty bread as a main course.

Try cooking the haddock in a pyrex oven dish with quarter tomatoes, and some clover garnish with fresh pepper, simplicity itself but very tasty, don't over complicate a dish most Chef's will tell you that, especially smoked haddock which is a very flavoursome dish on it's own, oh a few onions is quite nice too, depends what you like :-]

Cut it up small and poach it in a little seasoned milk,cook 2 or 4 oz of rice,depending how much fish or guests you have ,when rice is done,stir in fish.You could add vegs if you have any,or top with chopped boiled egg.Serve heaped on toast fingers,garnish with fresh parsley. Looks posh and is yummy

make a cheese sauce, add poached haddock and fresh parsley - spread on crackers...mmm
alternatively boil some eggs, cut in half length wise, remove yolk and add to haddock and cheese mix, and refill within egg white.

dice finely 1 onion and 1 large carrot in a pan melt a tablespoon of butter add onion and carrot and sweat off (cook till soft) add in 2 tablespoons of flour and stir till sandy texture add in the fish chopped into large cubes and add milk and bring to boil simmer till fish is cooked add some fresh chopped parsley. add other fish if you require this is a chowder recipe. I used to be a chef and used this simple recipe. enjoy
