You have to really strike down on the ball sharply to gain more backspin.

Try softer golf balls - traditional Balata covers.

Make sure your grooves are clean.

Most golfers I see striking the ball with an iron seem to be using more of a sweep technique which produces little or no spin. To produce good spin, the ball must be struck before the ground and not at the same time. The club face must also be descending at contact. A good indicator of a proper strike is when a divot is produced in front of where the ball sat.

Debbie Steinbach is the chief instructor on Digital Golf. She recommends that you hit down on the ball, then restrict your follow through. That helps impart spin on the ball.
