heres what i always do: cut the thing in half and slice it for sandwich-size pieces. butter the pieces of bread and put cheese on them. set them in the oven for 5-10 minutes or until cheese is melted. they are yummy and good with ketchup =D

...and the bread doesnt need to be soft so if its hard it okay.

Although bruschetta can be found on chic restaurant menus around the country, the classic is humble, a slice of grilled, roasted, or broiled Italian bread, rubbed with garlic and topped with diced fresh tomatoes and a bit of olive oil. I’ve served bruschetta (pronounced brus-ket-a) topped with wild mushrooms, grilled chicken and asparagus, artichokes, olives, melted Asiago cheese and wherever my imagination leads. See where yours leads. Here’s one of my favorites:

Ingredients:

(Makes 4 servings)

4 slices (each ¼-inch thick) crusty bread
1 clove garlic, halved
2 tablespoons extra virgin olive oil
½ small clove garlic, minced
2 plum tomatoes, chopped
¼ cup kalamata olives, pitted and halved
6 basil leaves, finely chopped
½ pound fresh mozzarella, cut in medium dice
Salt and freshly ground black pepper to taste
Instructions:

Brown the bread slices in a toaster oven or under the broiler, taking care not to let the bread burn.

Rub a cut surface on the halved garlic clove over each slice.

Meanwhile, place a small sauté pan with the olive oil and minced garlic over high heat for about 30 seconds, or just until the garlic begins to turn golden brown.

Place the chopped tomato in the hot oil, cook for 1 minute, turn off the heat, and add the olives, basil, and diced mozzarella.

Stir and season with salt and pepper.

Top each slice with a portion of the pan mixture.



Cheesy Garlic Bread
Yield: 12 Servings

Ingredients

1 1/2 c mayonnaise
1 c shredded sharp cheddar
1 cheese
1 c thinly sliced green onions
1 (including the tops)
3 cloves garlic, minced
1 loaf french bread (about
1 20 inch), halved lengthwise
1/3 c minced fresh parsley (opt)
1 paprika (opt)

Instructions

Mix mayonnaise, cheese, onions, and garlic; spread on bread halves. If
desired, sprinkle with parsley and paprika. Wrap each half in foil.
Refrigerate for 1 to 2 hours or freeze. Unwrap and place on a baking
sheet. Bake at 400 degrees for 8-10 minutes (20-25 minutes if frozen)
or until puffed but not brown. Cut into slices.

You can make pain per du...or as the Americains call it, French Toast. Bread that is a little older and firmer can handle the demands of the process whereas fresh bread is too soft and will go soggy when you make French Toast.

Make a bruschetta! Slice the bread and grill it or make it crispy. Rub the slices with garlic and add toppings of your choice, it could be anything from ham, to tomatoes or a combination... Herbs are nice in this.

Or make croutons, use it for breadcrumbs to coat fish...

You can make sandwiches or garlic bread.
Garlic Bread:
Spread on the butter, spread on some canned garlic and sprinkle on some garlic salt.
You can make a pizza on the bread even.

Slice and toast it and put bruschetta or pesto on top! Both are better homemade, but you can buy store brand if you don't feel like making it. DiGiornio pesto is pretty darn good, but I always make my own bruschetta (tomatoes, onions, italian herbs, olive oil, garlic, parmesan cheese, and italian parsley).

Put tomato sauce, grated cheese and pepperoni on it and make a french bread pizza.

Cut up and season w/ butter and evoo and garlic salt, bake to dry out, making croutons.

Grind up and make bread crumbs

Slice, and freeze, then get out just what you need to make garlic bread

Make bread pudding; let it dryout first, then cube and add your custard mix to it.
