The 14 karat ring has more gold content. The 10 karat ring is much stronger and less likely to bend.

If you are looking at yellow gold, you might also run into a different color when you get 10k gold. Since more copper/silver/whatever is mixed into the lower numbers, it can give gold a brassy or bronze-y tone to it. I found two articles - the wikipedia one has information under "Applications" and the Fun Chic 360 article has a little bit more technical information about how they reach the numbers.

24kt gold would be nearly pure. 12kt gold is 50% gold 50% some other metal alloy (silver, copper) making it harder and better suited for use in jewelry. 14kt has more gold content than 10kt.
