Gelatin is an animal product and therefore not suitable for vegetarians, whereas Agar Agar comes from seaweed and therefore can be used by anybody. Just goes to show there really IS a difference between pigs feet and plants!!!

Gelatine is from animals and Agar Agar is from plants. Vegetarian people would naturally choose Agar Agar.

Both are used to make "jellified" substances - sweets, desserts, glazes etc. the main difference is that gelatin comes from animals (typically pork) whereas "agar" or "agar agar" is derived from plant material (seaweed I think) and so is suitable for vegans and vegetarians. Gelatin has other non-food uses - such as drug capsules though they are being replaced to some extent with edible man made substitutes.

I have never tried pectin, but I love agar. I mix it with RW Knudson pure black cherry juice for a nice dessert. Agar doesnt melt in your mouth like gelatine, but its really good. It gels in just a matter of minutes, too. I think the measurements are different depending on whether you use the powder or flakes-but the instructions will be on the package. Good luck!

Agar-Agar, or normally just Agar is made from seaweed, gelatin is made from animal bone and cartilage, vegetarian gelatin is normally just agar.
