Diced or shredded chicken in BBQ sauce with sour cream, shredded cheddar and diced green onions...yum!

Carne Adovada is awesome as well...

Try this for size then guys.....cook ya jacket then scrape out the flesh and mash with a little butter and 1 teaspoon of sugar YES SUGAR, then chop 1 banana and mix with the flesh, refill jacket and enjoy....its gorgeous HONEST, you can do the same with mango, pineapple and a mixture of fruits......In the Caribbean the potato is treated as a sweet thing as well as savoury....Go on give it a go Fruit lovers will Adore it.

A raw egg yolk mashed into the hot flesh of the potato [it cooks in the heat] topped with finely chopped shallot, (moc) caviar and snipped flat-leaf parsley. This is a meal in itself.

I like it when the potato skin is crispy

I like it with real salted butter and black pepper for a simple one.

Also great with a tin of sweetcorn on it, mix in some more butter with the corn.

If I have enough money I love Prawns with thousand island sauce

uninteresting i'm afraid. I only like mine baked with salt rubbed into the floor so they circulate crispy, split... and drop a extensive dollop of butter interior. no longer healthful... despite if that's my prevalent.

A thick layer of anchor, or any other real butter and lots and lots of cheese, melting over it.
