Chocolate Chip Waffles:
You can serve these plain or topped with vanilla ice cream and chocolate minichips.
Cooking spray
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups fat-free milk
1 tablespoon butter, melted
1 teaspoon vanilla extract
1 large egg yolk
1 large egg white
1 tablespoon sugar
1/2 cup semisweet chocolate minichips
Coat a waffle iron with cooking spray, and preheat.
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, and salt in a large bowl. Place milk, butter, vanilla, and egg yolk in a bowl; stir with a whisk. Add to flour mixture, stirring until blended. Beat egg white and sugar with a mixer at high speed until stiff peaks form. Fold into flour mixture. Fold in minichips.
Spoon about 1/2 cup batter onto hot waffle iron, spreading batter to edges. Cook 3 to 5 minutes or until done; repeat procedure with remaining batter.
Yield: 6 servings (serving size: 1 waffle)

Start with a good waffle iron, a hand mixer, mixing bowls, utensils and plenty of the ingredients you'll be using. You can check eBAY for used one's if you don't have a lot of start-up money. Then check the internet for waffle recipies. I have one here to get you started:
1 3/4 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
3 eggs
7 tablespoons vegetable oil
1 1/2 cups milk
Preheat the waffle iron. Sift the dry indredients into a medium sized bowl. Separate the eggs, putting the egg whites in smaller bowl. Beat the egg whites until they are stiff. (If you are using an electric mixer, you can beat the egg whites first, then beat the batter without having to wash the beaters. (Note: If you beat the batter first, you have to wash the beaters before beating the egg whites.) Add the egg yolks, oil and milk all at one time to the dry indredients. Beat until there are no lumps in the batter. Fold the egg whites into the other batter using a spatula or other flat utinsel. Put a full 1/2 cup of batter in your waffle iron to make a 9-inch round waffle. This recipe makes about eight 9 inch waffles.

1 teaspoon baking powder

3 whole eggs, beaten
2 ounces unsalted butter, melted
16 ounces buttermilk, room temperature
Vegetable spray, for waffle iron
Preheat waffle iron according to manufacturer's directions.
In a medium bowl whisk together the flours, soda, baking powder, salt, and sugar. In another bowl beat together eggs and melted butter, and then add the buttermilk. Add the wet ingredients to the dry and stir until combined. Allow to rest for 5 minutes.
Ladle the recommended amount of waffle batter onto the iron according to the manufacturer's recommendations. Close iron top and cook until the waffle is golden on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve.

Well Wilbert a good waffle batter is made the night before you need it and brought out to room temperature about 30 minutes before you use it. You need a good waffle iron, preferably a commercial one for heavy usage. Heat the waffle iron and add a good ladle full of mix and cook until it stops steaming.
The Batter
2 cups flour
2 eggs
4 Tbsp. melted butter or oil
1 1/3 cups milk
2 Tbsp. sugar
4 tsp. baking powder
a pinch of salt
Mix the dry ingredients and add the wet ingredients then mix again. You can add 1 cup finely chopped pecans for a pecan waffle or 1 cup blue berries
Serve with lots of butter and syrup, Fruit syrups are the best.
Blueberry, strawberry, raspberry or peach or maple.
