They have cooking Sherry that is sold in grocery stores that don't have alcohol in them. Look around the marinade section of your store.

For sherry... Lets see:
General
Apple cider; non-alcoholic vanilla extract; coffee; or coffee syrup.
Measured
• 2 tablespoons sherry, substitute the following:
1 to 2 teaspoons vanilla extract or 2 tablespoons
orange or pineapple juice.
To substitute sherry in a marinade: for 1/2 cup sherry use 1/4 cup vinegar + 1 tablespoon sugar + 1/4 water OR
1 tablespoon vinegar, plus chicken stock or water to make 1/2 cup

listen, if a recipe calls for an alcoholic bevarage...i would just use it...heres why...alcohol evaporates at much lower temperature than alot of liquids including water...example: if youre cooking on a stove and you put some wine in your pasta sauce, the heat of the sauce will evaporate or cook-off all the alcohol and youre just left with the win flavor but none of the alcohol. its the same for all alcoholic beverages. you could just not use it but youre missing out on the flavor!

What wine or sherry does in cooking is that it adds an acid component to food to brighten up its flavor. Experiment with citrus juices, vinegar, or verjus instead.
