I am interested in setting up my own mail order cake business. I am an experienced caterer, no problem making the cakes, but-how can I send it out? Does anyone have any packaging solutions? Especially worried about iced cakes-how can I possibly wrap them without them getting smushed? Is there some way to secure them to where the icing doesn't get messy? Also, any solutions for keeping the goods cool? I'm worried about them melting. Is there some standard packaging other cake companies use to keep things cool? Help!

I used to work in a bakery (years ago). We made frozen pies. We had these pies in it's own lttle pie pan with a clear covering to close this up then we packed it down with pieces of dry ice then we had to put the pies in a foam case after that we taped the foam down and put all of this in our logo box. We had one to be shipped across the country and had it returned to us to see how the pie and packing held up. I have to say not a thing was wrong with the packing and the pie was still packed down with dried ice. This kept the pie cold through shipment.

The only way to ship a decorated cake without having to worry about it getting messed up it is to freeze it, then put it in a fitted, (bubble wrap works) insulated container so it can't slide around in the box. Then they put a wrapped chunk of dry ice in the outer container to prevent thawing. You must also consider your shipping days because you can't have a frozen pastry sitting in a warehouse over a weekend or holiday.
