Well lets try alittle South Texas
Take some Nopalitos (Cactus) from the store in the fresh produce section and a little diced onion and and and saute them in some oil till the cactus turn a different color green..and onion is pretty cooked..not fried ..ok while they are cooking add some red chili powder and after you have mixed that up together take it out of the pan place in a bowl and then take alittle more oil and about 6 eggs and make sure you have good non stick pan and let those eggs cook dont be tossing them around like oatmeal..when you see they are looking like they are cooking go ahead and turn them over and let them cook alittle more and fold in the cooked nopalitos and now you can mix in together and finish cooking the eggs..add alittle salt to yur taste and pepper and get some fresh flour tortillas and place in the nopalitoes between the tortilla and you have nopalito taco..do the same way with refried beans add small pieces of bacon except no red chili powder fry them up and the same with diced up potates fry the potatoe first..oopps dont forget the pico de gallo In a small bowl dice up fresh jalepeno and dice onion and diced up fresh romano tomatoes mix together cut a lime squeeze the juice in the mixture and add salt and pepper and sprinkle it on your nopalito and egg..and enjoy

dont eat eggs much but i do like scrambled eggs (i cant get them like my mums tho - mum makes the best scrambled eggs) i usually have with toast and sometimes bacon and tinned tomatoes.

I LOVE SCRAMBLED EGGS !!
eat them just about everymorning--PROTEIN--
although i do enjoy a slice of cheddar cheese, once in awhile-and i absolutely have to have "hot sauce" on them, a couple slices of orange on the side-and pomengranate,white or green ice tea-yummy

I eat mine with finely diced ham and green onions scrambled in, then topped with cheddar cheese and pepper, on good sourdough toast or an english muffin...

Toast ... But, and here's the greatest tip I will ever give you, mix marmite in with the egg - ok it sounds strange, that's what I thought, but it works ... it bl00dy works!!!
And if you want beans with it, throw some sprigs of fresh basil in with the beans, again, it works!!
lovely combination on toast!
