Eve was the first woman and adam was the first man. I never think of her as the mother of mankind. The Blessed Virgin Mary is the Mother of Mankind. God Is our Father. Eve pretty much couldn't keep her hands off the apple tree and spoiled it for the rest of us, but she is in no way the mother of mankind. You can't expect God to create another Eve. There is only one first.....another Eve would be the second Eve and still not the mother of mankind.

You shouldn't second-guess God's motives. That's the kind of thing I would do. See you in Hell!
But really though, I can see your point.....my best guess is that God knew all along what Eve was going to do, even before Eve existed. God may have created humanity knowing all along that we would be banished from Eden. Maybe we were created just to be bad. Maybe the rules were written just to be broken.
I think maybe God just wanted to sin, and feel the little tingle from being a rebel. Since God can't sin directly (everything God does is good by definition), we were created for God's vicarious thrills. But you can't sin if you don't have any commandments to break, can you?

Why do you pick on just Eve? Adam's sin was the greater. Eve was deceived; Adam was not, yet he still did what God told him not to.
But to get to the root of your question, why did God let them parent all of humanity after sinning?
You could ask you question of anyone -- why would God allow any sinner to propagate?
Because we humans (including Adam & Eve) were made corruptible flesh to test us, so God would know which way of life we would choose -- the way of sin, or the Way of doing what's right. After that is determined, God will change this corruption to incorruption, and this mortal flesh to immortal spirit, for those who show their love for God and his Way of life by obeying him.

Because its a load of bollocks. Surely the all powerful God could have created a perfect adam and eve that wouldn't have sinned, on the first attempt.
PS. You know you’re going to get loads of nonsensical babble from all the bible bashers for asking that, don’t you?

that all was god's plan to create the world ,because god does everything in this world & everything in this world is his wish. he does what he wants to do.so the sin done by eve and adam was preplanned.god wanted any idea to do some thing different then he found this way to do so.that was very interesting.if eve didn't eat the wheat then she lives in the heaven forever .then how does this world create.

It was through Adam and Eve that sin entered into the world yes you are right and yes God could have started over again and created a new human couple to start over the human kind but that would not have settled the issues that were raised there in eden! The rebellion in the Garden of Eden raised an important issue or question.Jehovah told Adam not to eat from a certain tree in the garden. If Adam did, what would happen?God said:"You will positively die."(Genesis2:17). However , Satan said exactly the opposite, He told Adam's wife,Eve, to go aheadand eat from the forbidden tree. "You positively will not die," Satan said,"In fact, he went on to tell Eve: "For God knows that in the very day of your eating from it your eyes are bound to be opened and you are bound to be like God knowing good and bad,"(Genesis3:1-5). Eve disobeyed God and ate. Why? Eve believed Satan. She thought that she would benefit by disobeying God. She reasoned that no longer would she and Adam need to answer to God. No longer would they need to submit to his laws. They could decide for themselves what is "good" and is "bad".Adam went along with Eve and also ate. Discussing man's original sin against God, a footnote in the Jerusalem Bible says: "It is the power of deciding for himself what is good and what is evil and acting accordingly, a claim to complete moral independence....The first sin was an attack on God's sovreignty." That is, it was an attack on God's right to be man's absolute ruler ir superior. So by eating from the forbidden fruit, Adam and Eve withdrew themselves from under God's rulership. They wentr out on their own, doing what was "good" or "bad" according to their own decisions. So the important issue or question raised was: Does God have the right to be absolute ruler of humankind? In other words is He the one to decide what is good or bad for humans? Is he the One to say what is right conduct and what is not?Or can man do a better Job of governing himself? Whose way of ruling is best? Can humans, under the invisible direction of Satan, rule sucessfully without Jehovah's direction? Or is God's guidance needed in order to set up a righteous government that will bring lasting peace to the earth? All such questions were raised in this attack on God's sovreignty, on his right to be the only and absolute ruler of humankind.
And had God started again anew then those issues would not have been answered and they could be left to be raised again but since Go Jehovah allowed time to prove that Man cannot rule successfully without God, there has been enough time without intervention from Jehovah to show that self rule by humans does not work out better, as the last 6000 years or so have shown that we cannot rule ourselves successfully without Jehovah God. If God had started with new Parents for us none of us would be here and now the issue has been forever settled and cannot now be raised again! But even though some may say that it was God's plan for us to sin it is not so He did not intend that at all!His intention was for all humans to live in peace and happiness on earth foreverand although there was an adjustment God's purpose was not thwarted his purpose still stands and will soon be realizedwhen his kingdom comesshortly!

Eve has taught us that free will is given us by God and there are consequences for the things that we do. Satan is the one that would of forced us to be good.
