I agree with most of the others that have answered. In england in the last 15 yrs or so with health and safety etc there are a lot of laws in place to stop harrassment at work etc. See the manager and if you don't get the desired result go to head office and then further if need be. the complaints procedure in any business has to be strictly adhered to and complaints like this have to be fully investigated. Looks like the assistant manager could be heading for the dole office that would teach him.

Straight to the manager! I fear that he will loose his job anyway as the manaer is less likely to stick up for your son unless he is essential to the running of the place.
The little guy always gets screwed.
I think the best case would be for your son to leave with some money paid in lui of notice. And with a good reference, it seems that working with this nutter would be a bad idea.
Don't chin the guy, if he is unpredictable then your son could end up with no job, no reference and a record
Just to add to what others are saying, it would be great if he could threaten or actually file assault charges and get any medical bills paid for, it is VERY unlikely that the police would bother to do anything as it is too hard to prove, if all parties were drinking, and your son could be in trouble too as drinking out of hours on a licensced premises is a crime too. If the Manager were to get annoyed that he was being hassled, he could throw the book at everyone and have good grounds to sack them all

Your son has rights and shouldnt lose his job if you went to the police, and if he did you have a good case for unfair dismissal. Show your son a good example and report this guy, even if charges aren't brought against him you are sending out a very strong message to this man that you and your son will not stand for bullying. Medical reports and photos of bruises will be taken as proof so go a.s.a.p before injuries fade. These kind of bullies work on the fact that no one will ever report them and will do it again and again until someone takes a stand. If he has a reputation already then this will work against him. Your son wont get in trouble for drinking on the premises, its not illegal.

Your son should get a doctor to make a record of his injuries and then go and talk to the manager(not the assistant manager) to complain about the incident. He should think about reporting the assistant manager to the police, too - if the assault really was unprovoked.

To be honest i think your son should go to the police and report the assault on him esp if it was unprovoked which from what you wrote this sounds like! unfortunately this still may mean your son could lose his job but he could get compensation for this from an employment tribunal if he does as he would have been forced to leave! this person should not get away with this behaviour! An alternative would be making an appointment with the Manager above this person and get your son to explain what happened and also explain that he does not want to leave or lose his job! hopefully the manager will be responsible enough to deal with this person and also safeguard your sons interests! good luck!

Tell the manager that you are going to sue the restaurant for failing to protect your son!
Watch the assistant get the "Order of the Boot"

Most restaurants have CCTV cameras for insurance purposes, it is illegal and often impossible to tamper with the tape.
Even if there is no CCTV, no one should be holding after hours "lock ins", and the manager should be informed, if this venue is part of a larger group then contact the area manager.
Dont worry about losing your job, most restaurants are desperate for staff with experience, quit that place and apply elsewhere

Go to the police and report it. There is no excuse for anyone to act as the assistant manager did and he needs to learn that.

You folks need to meet with the manager. The behavior of the assist. manager is inexcusable and opens the business to a potential lawsuit.
