My mate says 'you only have to cut the green bit away and it will be fine'. I wonder!

In Norway it is possible to buy a cheese called Gammeløst (literally 'old cheese'), which has gone beyond the green stage and is a rather darkish brown. The cheese has a slightly crunchy texture and a very tart acid smell. You either love it or hate it.

So I say with cheese, why stop at green (look at Stilton after all) when you could take this thing right through a rainbow of potential colour. Lets face it old cheese tastes good.

No it is not ok, you must cut at least 1 inch off from all sides, I learnt this when I was studying an advanced health & hygiene course.

If it's a block of cheese, yeah, you could cut it off (if it's a small area)and it should be ok. If it's sliced cheese, I wouldn't chance it.

You can do. Personally, I would find it difficult to do that, but I have sliced off the furry bits and eaten the centre before.

NO....I wouldn't...it sounds spoiled...it's not like you eat a slice of bread that is partially covered by mold...that's gross...the only cheese edible is that French bleu cheese....
