I got this recipe from an 80-year old lady at church. She made this for her children all the time. It is, by far, the BEST pudding I've ever wrapped my lips around.

** Rachel's Chocolate Pudding **

1 cup sugar
5 tablespoons flour
1/4 cup cocoa
2 egg yolks
1 1/2 cups milk
1 tablespoon real butter
1 teaspoon vanilla

Mix sugar, flour, and cocoa in saucepan. Beat egg yolks into milk and add gradually to flour/sugar/cocoa mixture. Bring to a slow boil stirring continuously over medium heat. When pudding thickens remove from heat and stir in butter and vanilla.

This is the chocolate pudding my mom used to make:

2 eggs
2 table spoons of sugar
2 top filled table spoons of flour
2 table spoons of cocoa powder
optional: some vanilla sugar
half a liter of milk

Put the milk in a casserole and slowly heat it. In the mean time, beat the eggs with the sugar in a bowl until the sugar is totally absorbed and there are little bubbles
Add the flour and the cocoa powder and continue beating. Add some of the milk and then pour the whole mixture in the casserole with the hot milk. Bring to boil whilst stirring.
When it boils, it will get the thick consistancy. In order to get it even, you need to stir. You can either pour it in individual cups and serve warm, or in a bigger recipient (for example having a nice shape) and let it cool so it gets firm and you can have your pudding in a nice shape.

You can also make caramel pudding, by "burning" sugar in the pan before you add the milk. In that case you don't use cocoa powder. However, caramel/coffee pudding is also very nice ("hopjespudding in Dutch). In that case you add some instant coffee to the mixture.
