my saviour recipe in case I have dinner guests but have almost no time to cook is the following recipe. Ready within 20 minutes and everybody loves it:
Quick curry
Serves 4
400 grams of chicken breast (cut into pieces in order
to stir fry)
1 pack of frozen green beans (usually around 450
grams)
1 table spoon of mild curry paste (for example
“Patak’s” brand)
2 decilitre coconut milk
100 grams of cashew nuts
Mix the coconut milk with the curry paste.
In a wok or pan (without oil), stir fry the cashews
until golden. Put the cashew nuts aside.
In the same wok or pan, put a bit of (sunflower) oil
and stir fry the chicken until golden, add the coconut
milk / curry paste mixture and the green beans
(straight from the freezer). Bring to boil and cook
for 10 minutes. Add the cashew nuts and serve with for
example (basmati) long grain rice. You can also use a
more spicy type of curry paste but you would have to
put less in the mixture…
