I use to have this really great recipe for a Czech Apple cake that was made for breakfast...and I have lost it and can't remember the exact meausurements for ingredients...I know it consisted of a basic cake that was then topped with thin apples slices and sugar and cinnamon and I was just wondering if anyone knew about this or even if anyone just has a recipe for a basic cake, I know the cake took all purpose flour, salt, sugar, baking powder, eggs, milk, and butter had to be cut in I just can't remember measurements and it is driving me crazy because I really wanted to make this for a family breakfast event.

QUICK CZECH APPLE CAKE
•2 mugs plain flour
•1 mug caster sugar
(Like superfine granulated sugar sometimes called Baker's sugar)
•1/2 mug vegetable oil
•1-1.5 mug milk
•2 eggs
•2tsp baking powder
•a few sliced apples or rhubarb or any other fruit
•a bit of cinnamon and icing sugar
Any sort of average sized mug will do the job. Slice enough apples or cut up fruit to thinly cover a baking tray. Mix the flour, caster sugar, oil, eggs and as much milk as necessary to get a fairly runny mixture, then add the baking powder. Pour the mix into a greased and well-floured baking tray, put fruit on top and sprinkle with icing sugar and cinnamon. Bake on gas 4 until firm throughout and golden brown on sides.

Introduction
This is a recipe I adapted from one in an old cook book. It's great warm or cold and freezes beautifully. I always double the recipe because everyone asks for seconds.

Ingredients
For Coffee Cake

1 Cube softened butter
1 Cup granulated sugar
2 eggs
1 tsp baking soda
1/2 cup sour cream
2 Cups flour
1 1/2 tsp baking powder



For the streusel mixture

1/2 cup brown sugar
1 tsp cinnamon
1/2 cup walnut or pecans, chopped coarsely
1 Tbsp butter


Directions
Step: 1 For the streusel: Combine streusel ingredients in a bowl and blend with fingers, rubbing the butter throughout the mixture. Set aside.

For the cake
In a mixing bowl with an electric mixer,cream together the sugar, butter and eggs until light and fluffy. Combine baking soda and sour cream and add to butter and sugar mixture.Add flour and baking powder.Pour half of the batter into a a buttered 10 inch baking pan or a tube pan as shown.Sprinkle half the streusel mixture over batter and top with remaining batter. Top cake off with remaining streusel.Bake at 350F for 45 minutes.



I sometimes lay a layer of thinly sliced apples or pears over the first layer of batterand then sprinkle the streusel on and procede as directed. If using pears substitute nutmeg for the cinnamon...delicious!

CZECH "CRUMBLE" CAKE

500g plain flour
150g caster or icing sugar
4 eggs (separated)
250g margarine
1-2tsp baking powder
a few grated apples, cinnamon, raisins and chopped nuts
Mix and knead the flour, sugar, egg yolks, margarine and baking powder into a firm dough. Put half of it into the freezer (the colder it is the easier it will be to grate but do not allow to freeze) and spread the other half onto a greased baking tray. Cover with the apples mixed with raisins, nuts and cinnamon and add sugar to taste. Whisk egg whites until they form stiff peaks (or until you get what Czechs call "snow") and spread over the apples. Roughly grate the other half of the dough on top to more or less cover the snow layer (the worm-like gratings will spread out once in the warmth of the oven). Bake on gas 4 until golden brown.

600 g grated peeled apples (corresponds to 1 jar of preserved grated apples),
240 g coarse flour, 240 g sugar, 4 eggs, 10 g cinnamon, 100 g butter, 1 pack of baking powder, vanilla sugar, 50 g raisins (washed)
Whip together sugar, butter and cinnamon, add flour mixed with baking powder, vanilla sugar and raisins. Mix the batter well, and add apples. Pour into a greased baking pan lined with coarse flour.
Bake in a moderate oven. Once cooled, the cake may be decorated with chocolate icing.
Icing: 8 dkg butter, 8 dkg icing sugar, tablespoon of cocoa, a tablespoon of cornstarch, a tablespoon of milk – must not boil

Apple Squares (Babcia's Apple Pie) Recipe #86249
My grandmother used to make this for us when we were little. It's sweet and the flavour gets better as the pie sits.
Crust
1 1/4 cups butter
4 cups flour
1 cup icing sugar
4 teaspoons baking powder
2 large eggs
1 large egg yolk
6 tablespoons sour cream
Filling
3 lbs cooking apples, thinly sliced
3/4 cup sugar
1/2 cup icing sugar
1 teaspoon cinnamon
1 teaspoon vanilla

32 servings Change size or US/metric
Change to: servings US Metric

1 hour 20 minutes 20 mins prep Preheat oven to 375°.
Mix filling together, set aside.
Combine flour, icing sugar and baking powder.
Cut butter into dry mixture.
Add eggs, egg yolk and sour cream.
Knead the dough for a few minutes.
Roll out the dough into 2 rectangles approximately 8 x 12".
Place one rectangle in a buttered 8x12 inch pan.
Bake for approximately 15 minutes, remove from oven.
Pour filling over baked pastry.
Cover with second rectangle of dough and return to oven and bake for 45 minutes.
Cool and remove from pan.
Sprinkle with icing sugar.

German Apple strudle
*1 package of store-bought phyllo pastry dough (6 layers)
*1/2 stick of melted butter
*1/2 cup of dark rum
*1 pound of tart apples, peeled, cored, and sliced
*1/4 cup of brown sugar
*1/2 cup breadcrumbs
*1 teaspoon of cinnamon
*1/2 cup raisins
*1/4 cup chopped walnuts (optional)

Preheat oven to 350 degrees. Combine melted butter with 1/4 cup of rum. Stack layers of dough on a cookie sheet, lightly brushing each layer with the butter/rum mixture before topping with the next layer. Brush top layer with the butter/rum mixture. In a bowl combine sliced apples, breadcrumbs, brown sugar, 1/4 cup of rum, raisins, cinnamon, and walnuts. Spoon filling down the left long-side of the phyllo pastry rectangle. Fold the top edge down and the bottom edge up, enough to cover the filling (about 2 inches). Roll dough up along long-side to enclose filling. Make small fork incisions atop the log in order for the apples to bake evenly. Brush the strudel log with remaining butter/rum mixture and sprinkle with cinnamon and sugar to taste. Bake for 30 minutes or until the pastry is golden and puffed.

Serve with warm vanilla sauce(Cook and serve Vanilla pudding substitute milk with heavy cream double the liquid and cook according to package let cool a little stirring frequently..add more milk or heavy cream to creamy sauce consistancy)
