All the above and keeps the customer happy by telling him whatever will do so.
I worked as an expeditor in a manufacturing company and most of the time all we could do is tell a story about when or how something would be shipped.
You are just a go-between for the customer and the rest of the production staff.

An expediter trays the food and puts it in line for the server. They will also garnish and add any condiments or necessities to the tray. They also notify the server, but watch out, good servers know when they are up, if they are busy they will not appreciate you yelling at them over and over. Know your servers, the strong ones won't need the reminder, the weak ones will, help everyone according to their ability. It is a fast paced, stressful environment but having worked with great teams I really appreciated the help. Good service brings back the customers along with good, hot food, and it is up to everyone in the restaurant to contribute. Have fun.

You keep up with the timeliness of orders going out to tables.
If there are problems with food with different cooking times going out, you make sure everything arrives fresh and hot at the same time.
Also, make sure that salads, soups, appetizers, etc. get to tables on time, and the waitstaff communicates with customers as to the status of their meals.
Any cooking problems that will affect service are also your baby, so you need to keep the cooks communicating with you as well. Remember, just because someone ordered it, that doesn't mean it's thawed and ready to cook....
You may need to communicate these problems to the customers as well.

you are in charge of telling the chefs when to fire the food and when it comes up you will check to see if all food and garnish are ready for delivery- if it goes to wrong person or the side is wrong it is your fault
