It's not a good idea to marinade while you defrost, since the water will dilute everything. The following recipe is flavorful without marinades.

Carnitas
Serves 6-8

Recipe Ingredients:
4-1/2 lbs. Farmer John® Boston Butt Pork Roast
2 tsp. Salt
1/2 tsp. Cumin ground
1/2 tsp. Coriander ground
1/2 tsp. crushed Oregano Leaves
2 medium-size Onions chopped
2 Carrots chopped

1: Place pork in a deep pan and cover with water. Add salt, cumin, coriander, oregano, onion and carrots. Bring water to a boil, cover pan and reduce heat and simmer for 2 1/2 hours or until fork tender. Lift meat from stock (save for soups) and place in a shallow baking pan.

2: Bake, uncovered, in a 350 degree oven for 45 minutes to 1 hour or until meat is very well browned. Drain off all fat. Remove both bones. Shred or separate meat into chunks to serve.

You really should defrost the pork roast first.
Pork is enhanced and complimented by sweet flavors.

PORK MARINADE
Juice from 6 limes
1/4 c. soy sauce
1 can 7-Up or Sprite
Combine and allow pork to marinade 2 to 6 hours.
Roast Pork according to weight.

MARINADE FOR PORK
1/2 c. reduced sodium soy sauce
1/2 c. lime juice (or lemon)
2 tbsp. honey
2 cloves garlic, crushed
Marinate pork 4 hours, turning occasionally.
Roast.

PORK MARINADE
1 can (6 oz.) pineapple juice
1/2 c. soy sauce
2 tbsp. brown sugar
1 tsp. ground ginger
1 onion, chopped
1 clove garlic, minced
About 3 1/2 - 5 lbs. pork roast
In a jar with a tight fitting lid, combine all ingredients except roast. Shake well. Pour over roast. In refrigerator, marinate, turning occasionally, for several hours or overnight before roasting.

You won't have good luck mariniating while defrosting. Marinade is used to soften and flavor meat. It has several components. Acid of some kind - usually vinegar or citrus to break down toughness, oil to make it adhere and seasonings to flavor either liquid or not. The thawing will mean the outside will get more than the inside. It would be better to wait and marinate it for an hour before cooking.

If you won't have time to marinade after it thaws you can still flavor it with some garlic cloves stuffed into slits on the underside.

If you do - this should work

1/2 cup orange juice
1/4 - 1/2 cup oil
a few smashed garlic cloves
seasoning (thyme, parsley, dash of this and that)
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried mustard

coat liberally, turn several times while marinating.

Do no marinate till it is completely defrosted. it will not marinate, all the water frozen in it will come out and dilute your marinade.what you want to do is let it defrost over night. then get some dried oregano, honey, garlic powder, salt, pepper, and a little red wine vinegar and oil. only a little bit of oil and vinegar. mix it really well in a bowl and rub the pork with it all over. then cook it in a low heated oven, like 275 for about an hour, it should be med well by then.

Yeah pork roast, marinate it in a blend of half part steak sauce (A1). Part Italian dressing (Any Kind). And for the flavor booster/ secret ingredients. Throw in a small part of lemon pepper to your liking. Add a small pinch of salt to bring out the taste. It goes nice after a J or a couple bowls.

properly, this question fairly delivered out about 5 good solutions from my mind, yet i will keep on with my cooking answer. If i'm having bbq pink meat, I pull it off with a fork, after it has cooked for most many hours in a low oven, it shreds itself... With sauce, convinced, and no, no slaw on my sammich.

You shouldn't marinade it until it is completely defrosted. Then, I suggest you use homemade italian dressing.
