Here's a great recipe without eggs!

Baked Potato Salad


Original recipe yield: 12 servings.

Prep Time: 25 Minutes
Cook Time: 1 Hour 20 Minutes
Ready In: 1 Hour 45 Minutes
Servings: 12 (change)

INGREDIENTS:

* 8 medium potatoes, sliced
* 1/2 pound sliced bacon
* 1 pound processed American cheese, sliced
* 1/2 onion, chopped
* 1 cup mayonnaise
* salt and pepper to taste
* 1/4 cup black olives, sliced

DIRECTIONS:

1. Preheat oven to 325 degrees F (165 degrees C). Butter a 9x13 inch baking dish.
2. Put sliced potatoes into a large pot, and fill with enough water to cover. Bring to a boil, and cook until tender but still firm, about 10 minutes. Drain, and set aside.
3. At the same time, place bacon in a large deep skillet. Cook over medium-high heat until evenly browned. Remove to paper towels to drain.
4. In a large bowl, stir together the potatoes, cheese, onion, mayonnaise, salt, and pepper. Spoon into prepared baking dish. Crumble bacon over the top, and sprinkle with olives.
5. Bake for 1 hour in the preheated oven, until golden brown.

The very easiest thing to do is just remove the eggs. One of my cousins is allergic to eggs, and when we make potato salad for family gatherings, we just leave the eggs out.

We garnish with red pepper strips and paprika on top, instead of the slices of hard boiled egg we usually use. Also, you don't notice the eggs missing from the actual salad, and it tastes pretty much the same.

Why bother to make it?

Seriously...boil enough potatoes, already peeled (if you don't like the skins on) to make the amount you'll need. Rinse well, put in fridge to cool.

In a bowl, mix the following:
[I swear by Hellman's] REGULAR mayo (enough to give the 'taters a thick coating)
salt and pepper;
4 tsp of garlic salt;
1/4 tsp of onion salt;
1 tsp parsley;
2 Tbsp yellow mustard;
1/4 c chopped green olives w/pimento

Take you 'taters out of the fridge and pour mixture over and mix thoroughly. Sprinkle w/ paprika, garnish with a sprig or 2 of fresh parsley and serve.

Note: I like to go heavy on the herbs to avoid blandness that comes with potato salad. I'm not a fan of any vinegar-based 'tater salad dressings (I REALLY hate German potato salad.)

Some people substitute salad dressings like Ranch, or Chipotle dressings. Try the site www.allrecipes.com Ohhhhh without eggs, I was thinking mayo lol. Just don't put in the eggs, it's not required.

The Italians have an interesting one. I don't have the recipe but I recall olive oil, parsley and a little seasoning.

carrots, peas, chives..pickles...along with the potato...

then add a table spoon and a half of Mayo..
and a tablespoon of Red Vinegar!
