I found bottles of vanilla extract and ground cinnamon that I haven't used in years. It doesn't have an expiration date on the bottles; the smell of the indgredients smell normal to me..but can vanilla extract and cinnamon really expire?

Vanilla extract won't expire because of the alcohol.
Cinnamon doesn't expire, it just gets milder. Use more of it.

I've been using the same really large bottle of vanilla from Mexico for over 7 years and everything I've baked still tastes good and hasn't made us ill or anything.

The vanilla has a shelf life of about a year, but both should be replaced every 6 months or so for the best flavor.

They are fine. The spice companies will say differently, they want your money.
