We had:
Cottage bread french toast -
hot deli sliced black forest ham, and sweet apple wood roast turkey - both sliced paper thin..
add to this a slice of Swiss cheese - sliced thin..
and another of provolone - sliced thin..
stack one meat, one cheese, another meat, last cheese..
(cheese should melt a bit..so set it back in the pan)..
sprinkle lightly with powdered sugar, and serve with sugar free raspberry jam on the side.
we wanted something different as well.. It's very good, but not an everyday sort of thing..

Chipotle Marinated Chicken and Pine Nut Quesadilla
Makes 4 servings
Ingredients:
4 ounces Tabasco Chipotle Sauce
8 ounces raw chicken meat, boneless, small dice
1 tablespoon canola oil
8 flour tortillas
12 ounces Monterey Jack cheese, grated
1/3 cup pine nuts, toasted
1/2 Roma tomato, small dice
1 cup Tomatillo Sauce (recipe follows)
Preparation:
Preheat oven to 350°F.
Place the pieces of chicken into the Tabasco Chipotle Sauce for 30 minutes. While the chicken is marinating, toast the pine nuts in the preheated oven for about 10 minutes. Watch them closely as they have a high oil content and will burn quickly. Once lightly browned, remove the nuts from the oven and transfer them to a cool dish.
Sauté the chicken in a non-stick skillet for 4-5 minutes in the oil. Cook the chicken until just firm, being careful not to overcook. Allow the chicken to cool and cut it into small pieces.
To Assemble the Quesadillas:
Place 4 tortillas on a non-stick cookie sheet. Spread the grated cheese over each tortilla evenly about 1/3 of an inch high. Spread equal amounts of the chicken, pine nuts, and tomato on top of the cheese and place the four remaining tortillas on top.
Place the quesadillas into the 350°F oven for 7-8 minutes until the cheese has softened and just begins to bubble out the sides.
To serve, cut each quesadilla into 8 pieces with a large knife on a wooden cutting board. Slide the cut quesadilla onto a plate and top each slice with a dollop of the Tomatillo Sauce

Tomatillo Sauce
Makes 6 servings
Ingredients:
1/2 avocado
3 tablespoons sour cream
1-4 ounce can tomatillos, crushed
Preparation:
Remove the pit from the avocado and scoop the fruit out with a soup spoon. Place the avocado, the sour cream and the tomatillos in a food processor or blender and purée until smooth.
Store in a sealed plastic container in the refrigerator. Best used the same day as prepared, but will last for up to 4 days.

Ingredients
1 1/2 tablespoons olive oil
4 turkey cutlets, about 4 to 6 ounces each
salt to taste

flour for dredging
8 ounces mushrooms, sliced
1/3 cup Marsala wine
2/3 cup low-sodium turkey or chicken broth
2 tablespoons chopped parsley
Cooking Instructions
1. Heat the olive oil in a large, non-stick skillet. While the oil is heating, season the turkey with salt and pepper and dredge it in flour.
2. Sauté the turkey over medium-high heat until golden brown, about 2 minutes on each side. Transfer the turkey to a platter and keep warm. Leave the skillet on.
3. Add the mushrooms to the skillet, season with salt and pepper and cook, stirring occasionally, until tender. Add the wine, stir with a wooden spoon to release any caramelized bits that may be stuck to the pan and cook until the wine is almost completely evaporated.
4. Add the broth and any juices that have accumulated on the platter. Simmer the broth mixture until it has reduced by half, about 5 minutes.
5. Add the turkey and simmer until the turkey is thoroughly cooked, about 2 to 3 minutes. Remove the turkey to a platter, spoon the sauce over the chicken, sprinkle with parsley and serve.

Barbequed Hamburgers, Grilled Corn and
TOMATO MOZZARELLA CASSEROLE:
1 1/4 cups packaged Onion and Garlic Croutons
3 medium ripe tomatoes, sliced 1/4 inch thick
6 ounces shredded mozzarella cheese
1 Tablespoon dried oregano
1 Tablespoon dried basil leaves
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
salt and pepper to taste
3 to 4 Tablespoons bottled Italian OR Vinaigrette Dressing
Scatter croutons over bottom of a 10" glass pie dish. Overlap with tomatoes in a circular pattern to cover croutons. Sprinkle mozzarella cheese over tomatoes. In a small bowl mix together oregano, basil, onion powder, garlic powder, salt and pepper. Sprinkle herbs and seasoning mixture over cheese. Microwave, uncovered, on HIGH for 3 1/2 to 4 1/2 minutes or until cheese is melted. Remove and spoon dressing over top. Poke holes to let dressing drain to croutons. Let stand for 5 minutes for flavors to develop. Serve.

8 cups baby spinach leaves
3 cups chopped cooked chicken breast (about 3/4 lb.)
1 can (11 oz.) mandarin orange segments, drained
1 cup sliced mushrooms
1/4 cup OSCAR MAYER Real Bacon Bits
1/4 cup KRAFT Balsamic Vinaigrette Dressing

TOSS spinach, chicken, oranges, mushrooms and bacon bits in large bowl.

Zataran's has a caribean rice mix that you add chicken to and it is goooood!! I add a small can of pineapple to it, fix some veggies and a salad and you have dinner in under 30 min.

grilled chicken with lettuce, maybe cheese if you prefer, roll it up in a tortilla and pour some ceasar dressing in it. you can add some olives (any type) if you like. It's fast and really simple.
