The word is derived from the enzyme name

ZYMASE.

This enzyme is serving the mankind for a long long time , right from the invention of bread.

In the modern days its use has increased and it plays a dominant role where fermentation is involved using yeast and other fungi.

Scientific study in that direction is Zymotechnology. It is a part of A larger science called Biotechnology. Just as Parasitology is a part of Zoology , which it self is a part of Biology,which in its turn a part of SCIENCE.
