I've done cedar plank salmon, slow cooked bbq ribs, marinated kabobs - any other suggestions on dinners that are both tasty and challenging to get right on the grill?

Lobster Tails with Citrus Butter

Makes 4 servings

Ingredients:

4 each 4-5 ounce lobster tails
1/4 cup unsalted butter, melted
2 teaspoons lemon juice
2 teaspoons orange juice
dash of salt
dash of pepper
dash of paprika

Preparation:

Cut the lobster tails down the center through the meat but not all the way through the shell. Fold over butterfly style.

Combine remaining ingredients and brush over the meat.

Put some foil over your grill and place the tails, shell side down on the foil. Cook covered for about 14-16 minutes until the meat is firm and white.

Brush occasionally while cooking.

Loosen the meat slightly before serving and brush one last time with the citrus butter.

I think any type of seafood is tricky on the grill, especially something like lobster tails. Try to look on the Boy Meets Grill website with Bobby Flay. He has tons of great ideas.

I love to grill. Go parge scale man, it is much more challenging.

Try to cook a whole leg of lamb,

A rabbit (without drying it out)

A Pork Loin is a chalenge, becasue it dries out so easy

A pig if you dare

Go for any big cut of meat, like a whole beef filet or a rib roast. A whole turkey is also a fun to do.
