In this day of dried dog food, bloat is quite common. this is where a dog is given a full dish of dry or poorly hydrated food and bolts it down. As this food absorbs the stomach acids, it begins to swell in size, overloading the stomach.
The dog then vomits a good part of it up to relieve the pressure. Since it is good food the dog will then usually after a couple of minutes, start to eat it again, albeit a bit more carefully.
If the dog has been sick because of bad food or illness, then it will not eat its vomit.

Its also not good to let your dog eat its own vomit. So you should clean up right away after he/she does!

I second Gigi's answer. Whereas urine and feces are left behind to establish territory, vomit is another story. In the animal world, vomit indicates a weakness or illness and animals will often clean it up so they don't "give themselves away" as possibly vulnerable to possible predators. Does not seem to matter that most of our dogs have absolutely no predators, they still have the natural survival-instincts of their predecessors.
Funny though, cats wouldn't be caught dead cleaning up their own hairballs they urp up on the floor, now would they?! And, why should they? The dog will do it for them and that has absolutely nothing to do with natural survival instincts! ick.

Dogs vomit more easily than we do, and most of the time it does not mean they are sick. In the wild they will spit up food they have eaten in the the field, to feed their pups that are being weaned. So, for them, vomited food is not automatically bad; in fact it is a little easier to digest, having been in the stomach a while already.

What tastes good to a dog is definitely different that what we preceive as "good".
If you think about it, all dog food advertisements are to make the owners identify with something in the food they like. After all, dogs eat all manner of nasty things.... cow dung, dead things, dead rotten really really dead things, garbage, all kinds of disgusting stuff.
