im catering for a lunch and want to serve some cocktails that have no alchohol as it taking place during the working day

This is a good one from Food Network:

Prep Time: 5 minutes
Yield: appx. 1 1/2 gallons

2 1/2 gallon cartons store bought orange/pineapple juice
1 (2 liter) bottle ginger ale and lemon lime soda
1 orange, sliced thin
1 lemon, sliced thin
1 lime, sliced thin

Combine cartons of juice, with the bottle of soda. For garnish, add in slices of fruit. Serve over ice.

I also leave out the slices of fruit and add orange or lime sherbert. Have fun!

Ginger ale or flavored tonics (raspberry, orange, etc.) and a form of fruit juices/fruit punches will go some distance and also you'll have many various mixtures. most awesome refreshing punch during summer, i put scoops of rainbow sherbet in a bowl, pour over pineapple juice then pour over an equal amount of seven up or sprite. the sherbert melts right away and cools of the juice and soda and has an awesome creamy taste

Try "blood orange soda" (in the mixers section of the grocery) and a carbonated drink like sprite or ginger ale. It's SOOOOO good!! Float some orange slices in it. Yum.

Pineapple-Lemonade Punch

1 tub CRYSTAL LIGHT Lemonade Flavor Low Calorie Soft Drink Mix
2 cups cold water
1 can (46 oz.) pineapple juice
2 Tbsp. grenadine syrup
1 can (8-1/4 oz.) pineapple chunks in juice, drained
8 wooden skewers
EMPTY drink mix into large pitcher. Add water; stir until drink mix is completely dissolved. Stir in pineapple juice and grenadine syrup. Refrigerate several hours or until chilled.
MEANWHILE, insert pineapple chunks evenly onto skewers; cover and refrigerate until ready to use.
SERVE in 8 tall glasses over crushed ice, if desired. Add 1 pineapple skewer to each glass.

Sangria Punch
3/4 cup COUNTRY TIME Lemonade or Pink Lemonade Flavor Drink Mix
1 qt. (4 cups) cold reduced calorie cranberry juice cocktail
1 cup cold orange juice
1 Tbsp. fresh lime juice
3 cups cold club soda
2 medium oranges, sliced
2 medium limes, sliced

EMPTY drink mix into large pitcher. Add cranberry juice cocktail, orange juice and lime juice; stir until drink mix is completely dissolved.
REFRIGERATE until ready to serve.
STIR in club soda and fruit. Serve over ice cubes in tall glasses.

1 can Orange Juice
1 can pinapple juice
1 two liter 7 up

Mix all together in punch bowl, top with sherbert ice cream, just put scoops down in the punch and let it melt.
