Pesto Sauce - The classic Italian sauce.
2 cups fresh basil leaves, packed
4 tablespoons piñons
5 garlic cloves, finely minced
¼ cup grated Parmesan cheese
½ cup olive oil
Instructions
Place basil leaves in small batches in food processor and whip until well chopped. Add about a third of the nuts and garlic, blend again. Add about a third of the Parmesan cheese; blend while slowly adding about a third of the olive oil, stopping to scrape down sides of container. Process basil pesto until it is a thick, smooth paste. Repeat until all ingredients are used, and mix all batches together well. Serve over pasta. Basil pesto keeps in refrigerator one week, or in the freezer for a few months.

Ingredients
(6 servings)
2 To 3 - cups fresh basil leaves
3 tb Pine nuts
2 Cloves garlic
1/4 ts Salt
1/2 c Olive oil
1/2 c Parmesan cheese,grated
Instructions
Cherry tomatoes for garnish
Place all ingredients except oil in a food processor or blender Process, quickly, to a puree. With machine running, gradually add oil until absorbed. Toss with 1 pound fresh, hot pasta (vermicelli, linguini, and so forth). Serve hot. Garnish with cherry tomatoes.

Take a glass of olive oil, place in a blender...add a large bouquet of clean (washed & dried) basil leaves, a handful of pine nuts, 2 or 3 cloves of garlic, salt and prepper to taste...Blend all together until it is fairly smooth and liquid . Now add your grated parmesan and keep blending until your Pesto has thickened to your taste...
Serve over any type of pasta, also delicious on boiled vegetables.
If you can't find pine nuts you can replace with cashews, it isn't exactly the same but the flavour is quite similar...

1 cup extra virgin olive oil
1/2 cup parmesan cheese
4 cloves garlic
1/4 cup pine nuts -- or almonds, pinon

1 dash salt -- optional
Place basil in a blender. Blender speed should be in liquify or high. While the blender is on, slowly add oil until basil and oil are well emulsified.
Add remaining ingredients and process.
