Zucchini Bread
INGREDIENTS:
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cups white sugar
3 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped walnuts

DIRECTIONS:
Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.
Strawberry Bread:
INGREDIENTS:
2 cups fresh strawberries
3 1/8 cups all-purpose flour
2 cups white sugar
1 tablespoon ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
1 1/4 cups vegetable oil
4 eggs, beaten
1 1/4 cups chopped pecans
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Butter and flour two 9 x 5 inch loaf pans.
Slice strawberries, and place in medium-sized bowl. Sprinkle lightly with sugar, and set aside while preparing bread mixture.
Combine flour, sugar, cinnamon, salt and baking soda in large bowl: mix well. Blend oil and eggs into strawberries. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened. Stir in pecans. Divide batter into pans.
Bake for 45 to 50 minutes, or until tester inserted comes out clean. Let cool in pans on wire rack for 10 minutes. Turn loaves out, and cool completely
Peach Bread
INGREDIENTS:
3 eggs
2 cups white sugar
2 teaspoons vanilla extract
1 cup vegetable oil
2 cups diced canned peaches, drained
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons ground cinnamon
1/2 cup chopped walnuts (optional)
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 x 4 inch loaf pans.
In a large bowl, beat the eggs lightly. Blend in the sugar, oil, and vanilla. Add flour, baking powder, baking soda, salt, and cinnamon; mix just to combine. Stir in the peaches and nuts. Pour batter into prepared pans.
Bake for about 1 hour, or until a tester inserted in the center comes out clean.

This is my Great-Grandma's Zucchini Bread recipe
(it's really old, so the format it's written in is a bit odd)
Beat until fluffy:
3 eggs
Add and mix lightly, but well:
1 c. oil (vegetable oil)
2 c. sugar
2 c. grated zucchini
1 t. vanilla
In seperate bowl, mix:
3 c. flour
1 t. baking soda
1 t. baking powder
1 t. salt
3 t. cinnamon
Add dry mixture to wet mixture and blend.
Add 1/2 cup nuts (optional)
Bake at 325 degrees in 2 loaf pans (9 1/2" x 4 1/2") for 1 hour

ZUCCHINI BREAD
3 Whole eggs
8 fluid ounces Corn oil
1 pound, 2 ounces Sugar
1 tsp. Vanilla extract
2 tsp. Ground cinnamon
1 tsp Salt
1 tsp. Baking soda
1/2 tsp. Baking powder
14 ounces All purpose flour
11 ounces Zucchini, coarsely grated
4 ounces Pecan chopped
Combine all dry ingredients together, combine all liquid ingredients (including zucchini) together. Add liquid ingredients to dry ingredients- this is called the muffin method. Bake in two greased loaf pans aat 350 degrees approximately one hour.
This recipe is really good. I don't like zucchini and I like this bread. Good luck!

Zucchini Bread

2 c. flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder

1 tsp. nutmeg
1/4 tsp. cloves
1 c. chopped nuts
1/2 c. raisins
Preheat oven to 350 degrees. In large mixing bowl, beat eggs until frothy. Add sugar, oil and vanilla to eggs and beat until thick. Stir in zucchini. Sift together dry ingredients and add to zucchini mixture; mix well. Stir in nuts and raisins. Pour into two greased and lightly floured 9 x 5 x 3 inch bread pans. Bake 1 hour or until done.

Strawberry Bread
3 c. mashed strawberries
3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
2 c. sugar
1 tsp. salt
1 1/4 c. oil
4 well beaten eggs
TOPPING:
8 oz. cream cheese, softened
Reserved strawberry juice
Bake at 350 degrees (50 to 60 minutes).
Drain 1/2 cup strawberry juice from mashed strawberries and set aside for topping. Mix all dry ingredients together. Make hole in center of mixture. Add strawberries and remaining juice, oil and eggs.
Mix by hand until thoroughly combined. Pour into 2 greased 9 x 5 inch loaf pans. Bake. Cool thoroughly on a wire rack. Topping: Mix together reserved strawberry juice and soften cream cheese. Blend until smooth. Drizzle over top of bread.

1/2 c. chopped nuts
2 tbsp. fresh cinnamon basil
1 c. milk
1/4 c. vegetable oil
1 egg
1 tsp. peach extract
1/3 c. packed brown sugar
1/2 c. mashed fresh peaches
Preheat oven to 375. Sift together flour, baking powder, salt and cinnamon in a large bowl. Stir in whole wheat flour, brown sugar and nuts. Mix well. Make a well in the center and set mixture aside.
In medium bowl, mix mashed peaches, milk, oil, egg and peach extract and whisk until blended. Add to dry ingredients, pouring into the well. Stir just until dry ingredients are moistened. Fold in cinnamon basil. Pour mixture into 3 greased and floured loaf pans (5 1/2 x 3 x 2). Bake at 375 for 25-30 minutes. Cool pans on rack for 10 minutes then remove bread from pan. Cool bread on racks.
