Here you go:

ORIGINAL FRITO PIE (recipe can be doubled, tripled, etc.)
Serves about 4.

1 1/2 pounds lean hamburger, browned and crumpled
4 cups water
4 tsp. hot red chile powder
1 (16 oz.) can pinto or red beans, drained and rinsed
Up to1/4 cup flour
Salt, to taste
Garlic salt, to taste or 1 large garlic clove, minced (I prefer the latter)
GARNISH:
Favorite chile, cut into strips
Plain yogurt or sour cream
Frito chips

Brown meat and fresh garlic in an iron skillet. Don't drain the liquid. Transfer meat to a Dutch Oven. Add chile powder, beans, salt and garlic. Bring to a boil. Stirring constantly, add enough flour to thicken liquid. Reduce heat to low. Simmer uncovered 1 1/2 to two hours. Serve in bowls garnished with Frito chips, chile strips and yogurt or sour cream.

An authentic Frito pie MUST be served in the bag and eaten with a plastic fork (or better yet, spork). After your first pie, you may make it in a dish and eat it with regular flatware. But if you're a Frito Pie virgin, you gotta do it middle school cafeteria style your first time.

For one Frito pie:

Big Grab of Fritos (Dainty appetite? Use the snack-sized bag)
One cup of chili with beans, canned or homemade* (adjust accordingly for non-Big Grab)
grated Cheddar cheese
Plastic fork

Accouterments (your choice): sour cream, onions, tomatoes, lettuce, pico de gallo, cilantro

Snip across the side of the Fritos bag (an authentic Frito pie MUST be served in the bag and eaten with a plastic fork). Pour in the chili, top with cheese and anything else your heart desires. Then stick the fork into the bag, mix it up into a sloppy mess, and enjoy! More fun that a funnel cake at the flea market!

Frito pie is best served with Coke or beer. If the chili is especially hot, a cool glass of milk will help soothe your weary palate.

*A tasty compromise for homemade chili:

1 can chili without beans
1 can dark red kidney beans, drained and rinsed
1 can whole tomatoes, drained and chopped coarsely

Add-ins: cumin, chili powder, chopped jalapeños

Mix up the whole mess and your favorite add-ins to taste. Heat it up on the stove or in the wave.

I crush the fritos (or Dorito type tortilla chips).
and put 1/2 of them in the bottom of a baking dish...
Meanwhile sautée a pound of hamburger meat (I use half beef half pork with a cup of chopped onion, 2 cloves of garlic finely chopped, 1 red bell pepper, 1 green bell pepper. all chopped. once the meat has browned add some salt and the mexican spices...packaged taco or chili spices will do or mix your own to your taste. Add half a can of tomato sauce (plain). Pour the other half over the crushed fritos. Add the meat mixture on top then pour a small pot of sour cream over the meat and add the rest of the crushed fritos to form the upper crust. Place grated cheese over this (mozarella is fine or monterrey jack or half of each for more colour). Add another pot of sour cream over the top...sprinkle with spices and put in the oven until the cheese melts...
(or in the microwave at medium power for about 3 minutes, and 1 minute at full power.)
Serve with white rice with corn and peas and refried beans

Hormel chilly (no beans) 1 small bag of frito's heat chilly open bag along the side (not top or bottom) pour it chilly (yes right in the bag) add your choice of shredded cheese and get a spoon

I brown a lb. of hamburger meat; drain; add 1 pkg. taco seasoning, add Fritoes - fix in a dish with lettuce and tomato - delicious!
