OLGA's ZUCCHINI BREAD
3 eggs
1 cup vegetable oil
2 cups sugar
2 cups coarsely grated zucchini (loosely packed)
1 Tablespoon vanilla extract
2 cups flour
2 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon baking powder
1 cup walnuts - chopped
In a large bowl, beat eggs until light and frothy.
Mix in oil and sugar. Stir in zucchini and vanilla extract. Combine flour, baking soda, salt, baking powder and nuts; stir into the egg mixture. Divide batter into 2 prepared loaf (8x4 inch) pans. Bake at 350 degrees for 60 minutes, or until done. Cool for 10 minutes in pan and then cool completely on wire rack.

This is a family recipe that we have been making for years. It is soooo good but not exactly a bread but if you make it you will truely enjoy it.

Chocolate Zucchini Cake

1/2 cup margarine
1/3 cup oil
1 3/4 cup sugar
2 eggs
1 ts. vanilla
1 cup buttermilk
4 Tbls cocoa
2 cups zucchini, grated
2 1/2 cups flour
1 ts. soda
1 ts. salt
1/2 ts baking powder
Topping:
Chocolate chips to preference I usually use about a 3/4 cup as we like chocolate
Nuts if desired I like pecans about 3/4 cup
2 Tbls sugar

Cream margarine, oil, and sugar. Add eggs, vanilla, buttermilk and cocoa. Stir in zuicchini then add remaining ingredients and mix well. Pour into 9" X 13" pan that has been either sprayed with baking spray or greased and floured, sprinkle with chocolate chips, nuts and the 2 tablespoons of sugar. Bake at 350° for 40 to 45 minutes until toothpick comes out clean.

INGREDIENTS:
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon

3 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped walnuts

DIRECTIONS:
Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

ZUCCHINI BREAD


3 Whole eggs
8 fluid ounces Corn oil
1 pound, 2 ounces Sugar
1 tsp. Vanilla extract
2 tsp. Ground cinnamon
1 tsp Salt
1 tsp. Baking soda
1/2 tsp. Baking powder
14 ounces All purpose flour
11 ounces Zucchini, coarsely grated
4 ounces Pecan chopped


Combine all dry ingredients together, combine all liquid ingredients (including zucchini) together. Add liquid ingredients to dry ingredients- this is called the muffin method. Bake in two greased loaf pans aat 350 degrees approximately one hour.

This recipe is really good. I don't like zucchini and I like this bread. Good luck!
